jan, sisig? it's a favorite pinoy pulutan that originated from pampanga. it's made of pork skin (head or otherwise), ears, and liver sauteed with garlic, chili peppers, and onions. seasoned with tuyo and calamansi. some people like to put chicharon on top; while some put mayonnaise on their sisig- depende lang sa recipe nila.
