Hometown Recipies
« on: June 29, 2007, 09:20:41 PM »
Dear Mike,

Naa koy gamay nga suggestion.

Hinaut unta nga mag abre ka ug usa ka folder dire nga mag talk about food or Recipe and I am sure this will become a hot topic.

I am sure many would post their recipies.
-Native Food: (example: biko, kalamay, suman, puto...etc.)
- Cakes & desserts:

So to start with, below is my native recipe:

Nilabog nga Pagi:
1 Kg. diced sting-ray meat or (Pagi), about 1/2 inch thick.
1 tsp. salt (or as desired)
1/2 cup vinegar (any kind)
1-lemon or 3 large limonsito (Juiced)
4-5 stalks lemon grass (tangad), bundled
2 cups coconut milk (powder substitute will do)
1 head onion (chopped)
3 cloves garlic (chopped)
2-3 tbsp. oil

Procedure:
Marinate diced sting ray meat with lemon 10-20 minutes (this will reduce the amonia smell).
Heat the oil in a large wok or frying pan. Saute' the garlic until golden brown. Drop in the onion and stir until soft. Drop in the sting-ray meat and pour vinegar. Cover and simmer for 2 minutes (this should be in hi-fire or 300 degrees for electric stove). Add coconut milk and lemon grass while stirring, add salt to taste. Put cover and reduce fire or temperature to 1/4 allowing to simmer for 5 minutes. Remove from flame.
Serve in a shallow bowl, garnished with garlic leaves and sliced lemon.

A glass of bahalina or red wine shall be served.

Mao ni giinon ug pinakurat nga pagkaluto.

Mike, hope you will open one recipe folder and thanking you in anticipation.

Best Regards,

Macky Ferniz

macky, i love to cook! i cook especially when i miss home, but since i never cook when i am back home, i always end up improvising which make the dish tasting not quite right. this recipe suggestion is good.

the question is, will salmon do for the recipe instead of sting ray meat?

Yeah, I second the motion. A board on homegrown recipes would be great!

And HaZel can finally tell us the recipe of Peanut Kisses (the owner is a good friend of hers, he he he).

Dugo-dugo

I you wanna use laman-loob sa baboy, hinluan todo2x ug ikuso2x pa jud ug dahon sa bayabas aron mawala jud langsa ug kanang slimy feeling bitaw.  Pwede pod harina ang ikuso2x instead of dahon then hugasan na pod.  If you prefer not to use laman-loob, use pork belly, boil and chop.

Procedure:

Ibutang sa kaha ang laman-loob tapos ipa resiko or ipa render ba aron mogawas ang mantika and until ma brown na pod like gi prito sa iyang kaugalingong mantika.  ikuhaon sa kaha dayon i tadtaron. in the meantime, kuhaan tong mantika sa kaha and just leave enough fat to sautee lots of onion, pepper and garlic, in that order, until translucent.  add vinegar to deglaze the pot, add back the chopped laman-loob, and the blood. season to taste with salt and lots of corn pepper.  you can also add pork cubes, to add mor flavor, or you can do away without it too.  add the blood and let boil.  do not overcook otherwise your dinuguan would look so black.  if it's not thick enough, mix a little water with corn starch.  that should be good!

Macaroons..............................LAMI!

2tablespoon butter
1/2 cup white sugar
4 Eggs
1 can of Condensed milk
200 grams of dessicated or fresh coconut strips/flakes
4 tablespoon Hershey's baking powder/native chocolate baking powder
1tsp vanilla extract
small cupcake papers muffin/cupcake pan
Oven at 300* degrees

Instructions mix all ingredients together pour into cup cake papers and place in oven for about 15-20 baking time.

If you want to make plain white macaroons do not add raisins on top until after you place batter inside of paper.

Enjoy this simple but tasty treat.

It is only natural for you people from Northern hemisphere to crave for carbs. Your body needs heat for the long Winter.

Hehehe

Being brought up in cooking environment as a child, I learned how to cook through instinct. Sa bata pa ko mo tukar dayon ang katapolan kung may provincial meet or special occasion kay patabangon man mi sa akong mama. Usahay, apason mi ug latos kay mo laag man gyud sa silingan.

That's very good to know, Macky na you can cook!  My husband does too but sya ra kasabot sa iyang nilutuan and he calls his cooking dayon, gourmet cooking!  Wa diay mo na exempt anang latos?  Kami pod oi!  As to my cooking, I think it started from my grandmother.  Dili tuod to manglatos pero pirte ka banhaan (may her soul rest in peace!  I love you, Nanay Elena!).  Magkurog2x gud ko adto maayo nlang makapasumangit na ang onion nakaingon na gahilak unya Tatay Macar was there to defend us!

Here we have often baked all sorts of cookies for friends , family and for persons in the capitol building.
Chocolate chips for one bag of Hershey's cost almost $6.00 for one bag, but if you bake baby sized cookies it makes allot.

Looking at binsi's pictures my mouth starts to water and my fat cells start a hollering; "COME HERE!" "I WANT TO EAT YOU!" "I MUST HAVE YOU!" Teaser's!
