Pack fresh food correctly before you take your flight

It seems this is a must even when taking a domestic flight, as this vacationer recounts...

MANILA, Philippines—The first time I was made to leave some pasalubong at the airport was in Bohol. They were sea urchins (uni) harvested fresh from the sea at the resort, where I stayed for three blissful days, and bottled without the shells.

I was sure the inspector was eyeing the fresh, slippery flesh of the two varieties there, the runny tuyom and the firmer swake, and grateful I couldn’t bring them with me.

My only consolation at being deprived of my treasured sea urchins was being given ube halaya by a cousin’s cousin who I chanced upon at the waiting lounge. She proudly proclaimed it was made from the best variety of purple yam in the country, the kinampay, that is Bohol’s pride.

I have since learned my lesson. Now I make sure that I transfer such wet food into plastic containers with the covers screwed tight and sealed with masking or packing tape.

That is how I pack the salted sisi (small oyster-like shellfish) bought from the Tacloban market whenever we go home to Leyte. More important, my sisi containers have to be checked in, never hand-carried.

Big styrofoam containers with non-liquid ice packs have made it possible to bring fresh seafood from the provinces to Manila.

I remember the time not too long ago when we had to fry the fish and steam the crabs and shrimps just to be able to bring those home in the freshest state possible.

Pasalubong are gifts you give to family and friends when you return from trips for work or vacation. Sometimes you are asked for specific things (bilin). Those who do are warned that they will get their wish as long as I don’t have to look for it. But somehow they end up on my list of must-find.
