Native Bohol Foods

Hi! I was searching the net for information about Bohol foods and culture... Luckily i bumped into this site. I was hoping that you guys can help me out?

I'm a Culinary Arts student based in Manila. I was assigned so report on Bohol, focusing on its native foods. I searched the net, i browsed through our library but the information i got was very minimal. It wouldn't suffice.

Can anyone there help me? I need a lot of famous native Bohol dishes and any information regarding this.

I got something from another website that says:

"Quit popular food In Bohol on the street was the chicken barbecue and the rice called “Pusu” in local dialect it is the rice where contain on coconut leaves in triangle design and boiled.
Kinilaw – it is fresh fish sliced into pieces and mixed it w/ vinegar, onions, ginger and sometimes it also contains w/ coconut milk, also mixed it w/ salt and lemon, it is very much delicious .
Hinalang na Manok- combination of native chicken, mixed it w/ onion, ginger, pepper, Coconut Milk and red Hot chili.
Sinugba- it is grilled chicken, fish or pork."

And also, I read the article about the ube bieng a sacred food in Bohol. Thanks to the one who posted that here, that will be a great addition to my report.

So... Yeah. Any information that you can give to me regarding this topic will be very helpful. And don't worry, I wint forget to add this website and the contributors to the credits of my report.

puto maya ( glutenous rice cooked in coconut milk, ginger, with small amount of salt  and sugar) this food should be steamed
sekwate ( hot chocolate drink made from cocoa beans)

I'm doing the report right now. Sadly, i have yet to satisfy my own craving for information. I need more. I'm sorry if i sound a little bit demanding... I'm just desperate to finish my report.

Binagow-made of dried grated cassava usually cook in clay pot half filled with water in short term steam cooked.
Salbaro-cassava chips.made of grated dried cassav also
Siakoy-made of flour dough,deep fried and sprinkle with sugar

1.   Binagow - steamed grated cassava; plain, with brown sugar, or with brown sugar and strips of young coconut / 2. Maruya - deep-fried ripe "saba" banana, cut lengthwise to near base and spread to form a fan; sometimes dredged in flour before deep-frying / 3. Tinunlob - unripe "saba" banana thinly cut lengthwise and sundried; tied together like a lei or necklace using coconut midrib before dipping into boiling pineapple juice; now that carabao-drawn sugar extractors no longer exist, brown sugar is used / 4. Kalamay - ground sticky rice mixed with brown sugar and, sometimes, peanut; referred to as THE Boholano delicacy or "pasalubong" / 5. Dinumogan - mashed ripe "saba" banana wrapped in banana leaf; sometimes with "buko" strips / 6. Alupe - a mixture of milled rice, sugar and "buko" strips / 7. Binaki - milled corn mixed with sugar and wrapped in corn husk / 8. Nilusak - unripe or half-ripe "saba" banana, boiled, pound or mashed, and formed into big round tablets, with or without sugar, usually with grated coconut / 9. Pakumbo - long "buko" strips dipped in latik and formed into spirals / 10. Tira-tira or Balikutsa - coconut milk and sugar boiled until viscous and formed into tablets or rolls / 11. Galang-galang - shredded sweetpotato, palaw and other suitable root crops formed into balls and flattened before deep-frying, and sprinkled with white sugar / 12. Halang-halang - finely chopped bony parts of the chicken (like neck, backbone, etc.) cooked in coconut milk mixed with spices including a lot of ginger or chopped native pepper, the small and hot variety called siling kulikot / 13. Humbang nangka - unripe jackfruit chops cooked in coconut milk made spicy by ginger strips and achuete, made even more delicious if mixed with "pinikas nga bulad" or slices of dried fish / 14. Kinamunggayang Bulinaw - fresh anchovy or "dilis" cooked in boiling water, salted to taste, and mixed with a lot of Moringa ("kamunggay", Visayan for "malunggay") leaves / 15. Dayok or Dajok - fermented fish intestines, roe and other entrails, with strips of garlic / 16. Las-ay nga Kabaw - carabao meat soup made more flavorful with just salt, ginger and young mango leaves / 17. Dinudog - squash porridge, consumed as either soup (with coconut milk and salt) during a meal, or as snack beverage (with coconut milk and sugar) / 18. Kinilaw nga Amba'ang - salad with the local spongy seaweed called amba'ang as main ingredient / 19. Kinatloan - flour-based butter-and-egg delicacy formed like bracelets / 20. Tajada - another flour-based toasted cookie, best with hot coffee.  SORRY, MARAMI PA, PERO MASAKIT NA MATA KO. I SUGGEST YOU CLASSIFY THEM INTO SNACK FOOD, MAIN DISH, OR MEAL APPETIZER.

How about peanut kisses, are these delicacies shaped in miniature chocolate hills originally from Bohol?  It's made of egg white, sugar, a little salt, vanilla and of course, peanuts.

Theres something about the Boholano humba nga baboy that stands out.

Its sweet after taste and the propensity of the people to put in fried ripe saba or sarabia as meat extender is brilliant.

Kalamay trivia:

Jagna-made kalamay is produced in Barangay Can-upao only.  So, when you go to BQ, look for the seal with the Can-upao mark.  Notice that the cocoshells used in Jagna are small. It is because they are bought from Misamis Occidental where certain coco varieties have small "bagol". Most of the varieties in Bohol have big cocoshell. Using them would mean an expensive but less saleable product.  Most kalamays sold at the Tagbilaran port are made in Alburquerque. Those at Tubigon pier are also made in Alburquerque, but some Tubignons are now producing kalamays in their hometown.  Packaging kalamay in plastic canisters is a recent trend triggered by the unavailability of small cocoshells. I tried eating one made in Alburquerque and it tasted real good. Also, it did not harden when placed inside the fridge.

Competetive na pud sa Can-upao-made kalamay ang kadtong made in Alburquerque nga akong natilawan.  Mas mo prefer ko ato kay dili mogahi after isulod sa ref nga open na.  Unlike sa Can-upao one nga mogahi after isulod sa ref kon ma abrihan na. For convenience inig travel, mas ok ang naa sa plastic canister.

In Bohol now however, there is a new technology nga nadevelop, i thinks sa ITS SAFE, a calamay that can go for three months,

In Bohol now however, there is a new technology nga nadevelop, i thinks sa ITS SAFE, a calamay that can go for three months,

Mas lami man jud ning pinabilangkad, he he he.  Recommended fish species: burot-burot, tamarong, bulinaw (dagko), mangsi, barungoy, sawasid, ug mga pirit (immature sa tulingan, bungkalisan, etc. basta dili pa fully grown sa mga dagkung matang sa isda.)

Labtingaw is any fresh fish nga ibulad then pritohon dayon inig kagabii. Mas lami kon i-marinate inig ka gabii, then ibulad pagka ugma, pritohon pagka gabii. Ang marinade pwede toyo, suka, ahos, sibuyas, laurel, other pahumot.  Kon walay lain, pwede na ang suka lang.  Pikasa ang medium-size isda, lengthwise, kuhaig hasang ug tinai.  Inig bulad, bilangkara gyud ang pagbutang sa buwaran. Mas lami man jud ning pinabilangkad, he he he.  Recommended fish species: burot-burot, tamarong, bulinaw (dagko), mangsi, barungoy, sawasid, ug mga pirit (immature sa tulingan, bungkalisan, etc. basta dili pa fully grown sa mga dagkung matang sa isda.)

Kana bayang silverfish kay mao nay ininglis anang insect nga mokutkut sa atong mga sinina. Kana bitawng gagmay morag flat lobster, kusog modagan pero dili kamao molikay kon pislaton.

Lami ra ba ning binignit gimikaw nako ug binignit, adtong pag uli nako sa Davao mi palit jud ko ug binignit sa Loreng's bisag mahal mipalit jud ko P25 ang usa ka yahong.

Pero mas lami jud magbinignit akong mama kay daghan ug sagul, ug sakto sa tuno. lamian ko sa binignit basta daghan ug landang ug sakto sa tuno dili lasaw.  :P
