Mo kaon kag Papaitan ?

Papaitan or pinapaitan is a stew of goat or ox tripes and innards flavored with bile and sampalok or siling labuyo. It derives its name from "pait" meaning bitter. It is most popular among Ilocanos, who are well-known for maximizing possible food sources for their cuisine, including innards.

I attended a Filipino Party here in Chicago couple of months back and they served this there. There were people from Ilocos region at the party and I asked one of the ladies what the name of the dish was. She said, "Oh that is Papaitan! Delicacy yan sa Ilocandia!"

Ingon ko, "Oh, I never heard of this before."

I tasted it, it was very rich, quite bitter alright, but the bitterness was subdued by the salty sweet taste. Very interesting consistency and flavor.
