ive tasted ginamos from tagbilaran, ubay, lila, jagna, dimiao, loon, inabangga, garcia hernandez. none can compare to the ones they make in valencia. my own personal bias lang ha. please don't be offended.

looking at these pictures is torture. it has been 3 years since i had ginamos from my hometown.

the ones they have available here are the bagoong they serve in filipino stores. and the ones they sell are from luzon. sub par in comparison to the ones from valencia. i rate the ones from manila a rating of 4 (in a scale of 1 to 10).

Valencia's was at 11. ;D

wow. prepared by a loving lola pod. i bet the food she made was just divine.

my lolo used to fish at night. and he would bring back bolinao that he caught fresh. he prepared it as kinilaw for us. lami kaajo.

he used to catch nokos too, and octopus. he made great kinilaw with those, too.

ah, it was simple, but the best.

When I came back to the USA, i brought 10 ginamos bottles from Valencia with me on my check in. Thanks God i didn't get caught. hahaha.

But yea, my parents cleared those up. I came back home and found out we only had 1 bottle left. :-X

so i savored each bite. :P  ;D

its been almost  2 years since i had ginamos from Bohol. i wish i could have some. ginamos from other parts of the Philippines just doesn't compare. I like the ones from Bohol because the bolinao is small and the way they salt it is just right. Not too salty, and not too big. its just... right.

slurp.  suddenly i'm hungry and wish to eat ginamos and sisi, lorenz.  it's been a long time too...

when i was younger, i used to watch my yaya arsing eat ginamos and sisi. she preferred to eat it with the burnt rice.

so one day, i tried it. lami baja. hahaha!

so one day i wanted to eat with her and asked to have some of the ric she ate, i noticed what she did to make the rice softer. she put sabao on top. then, she added glorious portions of sisi on top of the sabao-ified rice. spoonful bites.

lami kaajo.

yaya arsing was my yaya since i was a baby. she's still in our house in valencia, and the last time i was back home in 2010, i noticed that she still ate the same thing. i decided to sit with her and eat with her. na uwaw sija that i wanted to eat with her. ingon ko, gusto pod ko mo tilaw kai gi mingaw ko nimo. nag pa bonding bonding kami duha. eating ginamos and sisi over a sabao-ified rice. :P

bwahaha ! mee, too !

i always made it a habit to eat with our house help when i was back home. there were days when i cooked food for my aunts, uncles and cousins. i wouldn't eat with them, somedays. i would serve the food. after the family was done eating, that's when our house help would have their turn to eat, and i made it a point to serve the house help, too. i would eat with them. i loved to talk to them, hear their daily stories, and would inquire about their family pod. 3 of our household help are from leyte; and they are high school scholars. they work , but we give them a place to stay and send them to school. i really was so impressed with the three: si inday, si hing og si pia. after they ate, they clean up and then do their homework and study on the table.

one learns so much about people this way and i developed a fond respect for them. that and really am happy that all of them want to go to college for education, engineering and nursing. i want them to be successful as well.

nag hilak ko when one of our katabang, si hing, told me that in leyte, they only eat ginamos and maiz. he is one of 8 children in a baranggay that my grandfather was from. in fact, he is a distant relatie of mine. hing told me that in the morning, mo kaon ra sila og ginamos, maiz og pan. ogg naay kwarta, mo pait ilang mama og karne og rice. pero mahal kono. ingon sija nako, "maajo man diri sa bohol, uncle bran, kai daghan kanonon diri, og maajo pod ang oportunidad diri..." when he said that, i really felt a sense of appreciation for the things we have.

he said something to me that really made me smile. "gusto pod ko ma asenso, uncle bran. gusto ko ma successful pod para ninyo."

i said to him, "study hard, ondoy, and you will."

kani si hing, buotan kaajo. and he's very smart.

yea, i always remind them to study hard. and no bf or gf until they finish college. dali ra maka kuha og gf or bf, pero lisud ka homan sa studies.

whilst living in leyte they are eating only ginamos and rice , a lot of them are deprived of nutrition and necessary vitamins that they could get from fruits, veggies, and meats. its hard for their parents to provide necessary vitamins because its too expensive. as a coconut farmer, they only make maybe 4000 - 5000 pesos a month. and to feed a family of 5, 6 or 8? it is hard.

when i was in leyte , there are a lot of children there that are malnourished. the main produce in southern leyte is coconut hemp and coconut goods. so really, many of the families there are subsistence farmers. there is great disparity in southern leyte. you will drive through mansions and then next door are whole families living in payags.

in southern leyte, some children forgo schooling to work in harvesting coconuts. many of them begin doing this at such a young age of 8.

some of the children that climb those coconut trees (some rise up to 30, 40 feet) fall down. it is a very dangerous job for so little pay. i saw this with my own eyes when i drove through Maasin, Bato, Sogod, Padre Burgos towns in Southern Leyte.

nag hilak ko when one of our katabang, si hing, told me that in leyte, they only eat ginamos and maiz. he is one of 8 children in a baranggay that my grandfather was from. in fact, he is a distant relatie of mine. hing told me that in the morning, mo kaon ra sila og ginamos, maiz og pan. ogg naay kwarta, mo pait ilang mama og karne og rice. pero mahal kono. ingon sija nako, "maajo man diri sa bohol, uncle bran, kai daghan kanonon diri, og maajo pod ang oportunidad diri..." when he said that, i really felt a sense of appreciation for the things we have.

he said something to me that really made me smile. "gusto pod ko ma asenso, uncle bran. gusto ko ma successful pod para ninyo."

i said to him, "study hard, ondoy, and you will."

kani si hing, buotan kaajo. and he's very smart.

I say the same about Bohol: very fortunate to have the kinds of food we find everywhere in the idland... fresh and full of variety maski Manila dili kalupig. I love Bohol!!! ;)

Oo , Tita. Bol-anon ra gayod ahoa.

When I came back to the USA, i brought 10 ginamos bottles from Valencia with me on my check in. Thanks God i didn't get caught. hahaha.

But yea, my parents cleared those up. I came back home and found out we only had 1 bottle left. :-X

so i savored each bite. :P  ;D

I checked in 3 bottles of dayok this time... thru the green line ;D
