Pasta Recipes

Pasta with Aubergines, Peppers and Tomatoes

500 gms. pasta
2 medium sized aubergines
5 tomatoes
1 red or yellow pepper
2 cloves garlic
1 sprig of thyme
3 tbsp. olive oil
12 basil leaves
12 small black olives
salt, pepper, parmesan cheese

Slice aubergines into very small cubes. Fry in a frying pan over low heat of 2tbsp. olive oil. Remove seeds from pepper and add with shredded garlic. Cover and cook for about 20mins until tender. Meanwhile, peel and remove seeds of tomatoes, cut coarsely and cook for 15 mins with 1tbsp. olive oil, thyme, salt and pepper. Cook pasta for 15mins in a boiling, salted water. Pour into dish with aubergines and tomatoes. Serve with grated parmesan cheese..


Pasta with Mushrooms and Tomatoes


500 gms. pasta
250 gms. mushroom
50 gms. dried cepe mushrooms
1 onion
2 cloves garlic
50 gms. butter
2 tbsp. olive oil
500 gms. tomatoes
parsley, basil, salt, pepper, parmesan

Soak dried cepe mushrooms for 30 mins in warm water then rinse in running water. Drain. Peel, remove seeds from tomatoes and slice. In a frying pan, brown chopped onions and washed and slice mushrooms in olive oil. Cook for 5 minutes. Then add cepe mushrooms, tomatoes and chopped garlic.  Season with salt and pepper. Cook for 20 mins over low heat stirring from time to time until cooking water has evaporated. Add to cooked pasta with butter, parsley and chopped basil. Serve with grated parmesan cheese.

Inspired by Hazel's recipes below, I made pasta for dinner tonight.  I made a little revision.  I added tons of tomatoes as I don't have to buy them because we have lots in the garden, zucchini from our garden too, capers and my favorite secret ingredient which is not secret anymore now, fennel bulb.  I added a little presentation of sprigs of parsley and shaved stinky cheese.  I then served with warm sourdough.  Here's a picture of the pasta:

Thanks, Ms. C2.  Lami jud siguro kay discriminating man kaayo na ug taste akong bana but naka dugang pa man after a big plateful!  Mas lami man jud especially if most of the ingredients are harvested from your own garden kay makadugang ug value ba.  It's like you are enjoying the fruit of your labour.  heheheh  Bitaw oi, naa ra sa galuto ug sa gikopyahan sa recipes! *wink*

ms ethyl, here's another easy pasta recipe.

Pasta in Tuna and Tomatoes

500 gms pasta
750 gms tomatoes
1 Tbsp tomato concentrate
3 gloves garlic
a sprig of thyme
250 gms canned tuna in oil
3 Tbsp olive oil
salt and pepper

procedure:

peel and seed tomatoes, then chop up coarsely. brown garlic in olive oil, add tomatoes, thyme and tomato concentrate, stir then season with salt and pepper. cook for 15-20 minutes until tomato water has evaporated. add to cooked pasta. add crumbled tuna and its oil to tomato sauce, heat for a few minutes and mix to pasta. garnish with basil or parsley leaves.

Ms. C2, ok ra to at least you tried tapos kabalo na dayon ka what to do the next time.  If dili pa jud mamao the next time, try again.  It's safe to make as much sauce as you can dayon pagbutang nimo sa pasta, tan awa lang na dili ma upawan ang imong sauce.  I know you can do it ra jud because you knew what it should be like.

Fennel bulb looks like celery except na murag wider ang bases sa bulb sa fennel. 

Keep trying and you'll perfect that soon!
