The Physiology and Anatomy of Taste

Who here knows about the tastes of our tongues?

There are at least four qualities in human taste perception: saltiness, sourness, sweetness and bitterness (though some say umami is another). All qualities can be elicited form the regions of the tongue that contain taste buds, specialized structures that contain the taste cells, the detectors of tastants (substances capable of eliciting taste). Taste buds are onion shaped structures that contain about 50-100 cells. The bud rests in the basal lamina, and in its apical portion the taste cells project microvilli that poke through an opening called the taste pore.

Tastants dissolved in saliva contact the taste cells through the pore, interacting with taste receptors or ion channels on the surface of the cells. The result is a depolarization of the taste cells, leading to the release of neurotransmitters that will, in turn, stimulate afferent nerve fibers connected to the taste cells.

This information will be processed by central gustatory neurons. Each tasting stimulous generates a unique pattern of activity across a large set of neurons, which explains taste discrimination.

In presence of sinus infection, which comes in the form of drowsiness, as well as nasal congestion and or nasal drippage, the loss of smell affects the way in which foods taste to the person. The receptors for smell are located deep in the nasal cavity and the loss of smell affects how we taste food because the swelling in the nasal mucous membranes will result in the prevention of any aroma from reaching these receptors deep in the nose.

Due to the fact that the neurovascular bundles responsible for sending afferent messages to receptors for taste and smell are closely branched; any damage or blockage of one will directly affect the other.

That is why, when one has sinus infection, one's taste ability is significantly diminished. Until the alleviation of the infection.

Sinus infection is a result of flu, as well as allergies.

Speaking of sopsop,

My father would sopsop our nose when all of us, his children, were sick as babies. Everyone including myself, my sister, and my two little brothers.

As a result of it, my dad would get sick and get infected by his babies.

Angie, that is because the particulates that come from perfumes and cigarettes are pathogens, if they enter the body. It is an immune response when you sneeze after smelling it or tasting it. Your body is expelling the foreign particulates.

Amazing how our bodies work, eh?
