Take a habit of reading the labels of what's in it. Also, avoid food that has Hydroginated Oil, Corn Syrup, high in Sodium, and even MSG.

Canned goods are okay as long as it doesn't have the bad stuff in it. Ayaw mo palit ug delata nga naay lumping and who knows dugay ng naa sa shelf kay siyempre matay-an ug apil na makaon. Also, ajaw ibutang sa fridge any canned goods ilabina kung naabrihan na. You may want to transfer any leftover in a container. I've read it somewhere na canned goods can cause cancer that's why my husband and I are really trying to avoid canned goods as much as possible. I usually cook stuff from scratch.

Tita Birdie! Dili na siya brand new pagpalit namo adtong February 2006 oi kay 3 years old na na nga car.  Hehehehe...wa ko tugti ni banana mopalit ug brand new kay basin ako lang daw mabangga. 

Wow, Ms. Bella! Makabighani man ug anha dinha! Kim and I love boating, jetskiing, and any other fast boats. Ajaw lang ng sailboat kay boring kaajo kung way hangin.

Anyhow, lingaw ko kaajo tan-aw sa imo mga pics ilabina kanang nagtihaja ka! Nice boat oi! Bitaw kung naay boat, pang rich and famous lang na.

When I was shopping for a car, my husband and I went to see a Car Show in 2005 here in Sacramento. We both like this Dodge Charger but it's not practical to have one so we didn't get one. 




I like this yellow car but guess how much this is - it's $447,000! It's a Porche! Who's a crazy person would buy that expensive car! 



We both like this Chevy Aveo too because it has a good mileage and cheaper than most other cars we like....



But when we went to the car dealer, I end up with a Hyundai Elantra that has a good gas mileage and even cheaper than Aveo.

Ambot lang ha, improvement or change is good for the community but having to have the lights and noise during the night just to have entertainment sa Loboc River is NOT good. For me, I'm not in favor of this improvement. Eventually, it will ruin the nature of Loboc River.

I know I'm doing my own part by planting trees and grow organic vegetables and herbs, I'm car pooling with my husband to work (kay hadlok man pod ko drive freeway  ) and possible that we will be taking bus and light rail to save gas, I make sure to sort our garbage which goes to the Recycle and Garbage bin and do some other little things that makes sense in this world. If everyone do these little things, it will help our invironment in some ways. Sometimes at work, as much as possible, I don't print or make copies unless it is necessary and important, that way, I'm saving a tree or trees. Look what happen in the Amazon Forest! It's been flooded and it's because people cutting the trees!

1 cup evaporated milk
½ cup butter, cubed
3 egg yolks, beaten
1 teaspoon vanilla extract
1-½ cups flaked coconut
1 cup chopped pecans

Prepare cake batter according to package directions; set aside. In a small mixing bowl, beat cream cheese and sugar until smooth. Add eggs; beat on low speed just until combined.

Pour half of the cake batter into a greased 13-inch X 9-inch X 2-inch baking dish. Gently pour cream cheese mixture over batter. Gently spoon remaining batter over top; spread to edge of pan.

Bake at 325 degrees for 70-75 minutes or until a toothpick inserted near the center comes out clean. Cool on wire rack for 1 hour.

For frosting, combine sugar, milk, butter and egg yolks in a heavy saucepan. Cook and stir over medium-low heat until thickened and a thermometer reads 160 degrees. Remove from the heat. Stir in vanilla; fold in coconut and pecans. Cool until frosting reaches spreading consistency. Frost cooled cake. Refrigerate leftovers.

This cheesecake recipe is for Hazel (a.k.a. Ginger)! 

LAYERED  “HAZEL”NUT CHEESECAKE

Crust:
1-½ cups crushed vanilla wafers
¼ cup butter, melted

Filling:
4 packages (8-ounce each) cream cheese, softened
1-¾ cups sugar
4 eggs, lightly beaten
2 teaspoons vanilla extract
4 ounces finely chopped hazelnuts, toasted
1/3 cup semisweet chocolate chips, melted

Topping:2/3 cup vanilla or white chips
3 tablespoons water
1 teaspoon light corn syrup (can be substituted with Agave syrup)
½ teaspoon instant coffee granules
¼ cup chopped hazelnuts, toasted

In a bowl, combine the wafer crumbs and butter; press onto the bottom of a greased 9-inch spring form pan. In a large mixing bowl, beat the cream cheese and sugar until smooth. Add the eggs and vanilla; beat on low speed just until combined.

Divide batter into thirds. Into one portion, stir in hazelnuts. Pour over crust. Refrigerate for 20 minutes or until set. Into second portion, gradually stir in melted chocolate. Spoon over bottom layer. Refrigerate for 45 minutes or until set.

Spoon remaining batter over top. Place pan on a baking sheet. Bake at 350 degrees for 50-60 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around the edge of pan to loosen; cool for 1 hour longer. Cover and refrigerate overnight.

For topping, combine vanilla chips, water, corn or agave syrup and coffee granules in a saucepan; cook and stir over low heat until smooth. Cool to room temperature. Remove sides of spring form pan. Serve cheesecake with topping; garnish with hazelnuts. Refrigerate leftovers.


Note: This is a lot-of-work cheesecake but the result is worth it.

CHOCOLATE ALMOND CHEESECAKE

Crust:
2 cups crushed vanilla wafers
1 cup finely chopped almonds, toasted
1/3 cup sugar
½ cup butter, melted

Filling:
1 envelope unflavored gelatin
½ cup milk
2 packages (8 ounces each) cream cheese, softened
½ cup sour cream
¼ to ½ teaspoon almond extract
1 package (11-½ ounces) milk chocolate chips, melted and cooled
½ cup heavy whipping cream
Milk chocolate kisses, unblanched whole almonds and additional whipped cream

In a bowl, combine the wafer crumbs, almonds and sugar; stir in butter. Press onto the bottom and 1-¾ inch up the sides of greased 9-inch spring form pan. Cover and refrigerate for 1 hour.

In a small saucepan, soften gelatin in milk; let stand for 5 minutes. Cook and stir over medium heat until gelatin is dissolved. Cool to room temperature, about 6 minutes. In a large mixing bowl, beat the cream cheese, sour cream and almond extract until smooth. Beat in melted chocolate and gelatin mixture. Fold in whipped cream. Spoon into crust. Cover and chill for 6 hours or overnight.

Just before serving, run a knife around edge of pan to loosen. Remove sides of pan. Garnish with chocolate kisses, almonds and additional whipped cream. Refrigerate leftovers.

Note: You can substitute the crust with graham crackers instead of vanilla and almonds.

Personally, I don't like eating cheesecakes but I love baking them. I am not really of a dessert person except for chocolates or anything cooked with chocolates! 

Here's my 1st cheesecake I baked and probably been baking more than 30 since then including presents for birthdays, weddings, and for just special ocassions. My husband would always say "Hmmm....hhmmm... this cheesecake is the best!"

Tess’ Famous No. 1 Yummy Cheesecake

Crust:
1-1/3 cups whole almonds, toasted and ground
1-½ cups crushed vanilla wafers
½ cup butter, melted

Filling:
4 (8-ounce) packages regular cream cheese, at room temperature
1-2/3 cups granulated sugar
¼ cup cornstarch
1 tablespoon vanilla extract
3 large eggs
¾ cup heavy whipping cream
Assorted fresh fruits

In a bowl, combine almonds and wafer crumbs; stir in butter. Press into the bottom and 2 inches up the sides of an un-greased 9-inch springform pan. Bake at 350 degrees for 7-10 minutes. Cool on a wire rack.

In a large mixing bowl, place 1 8-ounce package of the cream cheese, 1/3 cup of the sugar, and the cornstarch. Beat with an electric mixer on low speed until creamy, about 3 minutes. Then beat in the remaining 3 packages of cream cheese.

Increase the mixer speed to high and beat in the remaining 1-1/3 cups of the sugar, then beat in the vanilla. Blend in the eggs, one at a time, beating the batter well after adding each one. Blend in the heavy cream. At his point mix the filling only until completely blended. Be careful not to over mix the batter.

Gently spoon the cheese filling on top of the baked almond-wafer crust. Place the springform pan in a large shallow pan containing hot water that comes about 1-inch up the side of the pan. Bake the cheesecake for 1 hour or until the center barely jiggles when you shake the pan.

Cool on a wire rack for 10 minutes. Carefully run a knife around the edge of the pan to loosen the crust. Cool 1 hour longer. Cover the cake with plastic wrap and refrigerate until it’s completely cold, at least  hours or overnight.  Remove sides of pan. Top with fresh fruit. Enjoy!

And voila…. Can I have a slice please? 

Note: I replaced the original crust which is a sponge cake. I’ll post the sponge
        cake recipe for other crust variations. For best result, make sure to bake the cheesecake below
        the middle rack but not at the very bottom.
