Ube, the Sacred Food of the Boholanos

Ube is one of the tubers or yam that grows abundantly and harvested in December in
Bohol. After the harvest, the rootcrops are inspected and those with bolo cuts and
bruises were used first for food as substitute for rice and corn. The rest are stored for
family consumption anytime during the year. Ubi planting goes back in June. There are
many varities of ube like kabus-ok, tam-isan, kabawoy, liko , binanag and the famous
purple-violet kinampay, the king of ube.

Ube is the main staple rootcrops of the Boholanos and venerated as sacred crop since
the ancient times.   During a famine that happened   long befor the coming  of the
Spaniards, it is said that the ube was the only crop grew in Bohol and saved the people
from extreme hunger and death.That is why they had a great respect for it and why it
is the only staple food mentioned in the Bohol Hym. At this time, the  Boholanos started
to honor by having  an Ube Festival in January. They had  also the Miss Ube Beauty
Pageant. You can see displays of different ube varities with different sizes and an award
is given to the biggest ube.

Tagged as one of the countrys' five crops for export by the Department of Trade and
Industry, the demand of ube continues to grow. Here and abroad, it is being marketed
in powdered form, puree, dried chips, cubes, syrup and for ice cream, the famous purpled
'kinampay'.

When one speak of Ube to a Boholano, there is always a story to tell.  When a person
accidentaly drop an ube  to the ground or floor, they say an apology saying "puyra gaba,
wala nako tuyoa" and kiss it as a sign of reverence and love.

The Boholanos believed that Ube was the  special food given to them by Bathala, the
Supreme Creator. It was the food that saved them from extreme famine when a drought
 happened long time ago.

We grow ube in our family farm in Pangangan island Calape pero amo rang kan-on.Lami baya ang ube sa binignit naa poy gitawag ug nilunaw.I remember many times I drop the Ube unya gipakiss gyud ko sa akong Mother kay makagaba lagi kono.Pila kaha ka ube akong nakissan.Sa ilalom pa gyud sa lantay i store ang ube kay mao may toy mas cooler nga place mao pud lagi mosugod sila ug katay so its normal gyud nga kara balay sa bohol siguro ilawom sa lantay naay ube nagsguod ug katay.

and unod. Wala ko kasulay pagtanom.

Ang ube maoy mainstay crop sa mga Boholano because it can be stored for a longer period of time.

Estimated preparation and cooking time: 2 hours

 

Halayang Ube Ingredients:

1 kilo ube yam root

1 can (14 ounces) evaporated milk

2 cans (12 ounces) condensed milk

1/2 cup butter or margarine

1/2 teaspoon of vanilla (optional)


Halayang Ube Cooking Instructions:

On a pot, boil the unpeeled ube yam in water and simmer for 30 minutes. Drain and let cool.

Peel and finely grate the ube yam.

Heat a big wok in medium heat.

Melt butter or margarine, add the condensed milk and vanilla flavoring. Mix well.

Add the 1 kilo grated ube yam,

Adjust the heat to low

Keep on mixing the ingredients for about 30 minutes or until sticky and a bit dry (but still moist).

Add the evaporated milk and continue to mix for another 15 minutes.

Let cool and place on a large platter.

Refrigerate before serving the halayang ube.

 

Cooking Tips:

You may spread additional butter or margarine on top of the jam before serving.

For the sweet toothed, sprinkle a little sugar on top of the jam after placing on the large platter.

Instead of manually grating the ube, you may cut it in cubes and use a blender to powderize the ube.

UBE JAM

Materials needed

ube puree*, 1 kg
water
pure refined white sugar
GDL
*Puree - to reduce food to a thick smooth liquid-by pushing it through a sieve or whirling it in an electric blender.

Utensils Needed

rubber scraper/spatula carajay weighing scale
osterizer/blender LPG with stove jars with cap
retort/autoclave stainless steel ladle
Procedure

Clean ube tubers by soaking in tap water and scrubbing using scrubbers to remove surface dirt.
Rinse thoroughly.
Boil for 30 minutes to 1 hour until soft or retort at 20-psi for 5 minutes. Drain and peel.
Cut, slice and mash ube. Weigh.
Add 0.2% glucono-delta-lactone (GDL)*.
Prepare 50% sugar solution* (syrup). Heat.
Add the syrup in mashed ube (1:1).
Blend thoroughly. Stir/Cook ube in moderate fire until desired consistency is attained.
Pack in jars. Leave 1/3-inch headspace. Seal thoroughly.
Process in retort at 15-psi for 15 minutes. Cool at room temperature.
Pack in carton boxes.
Seal, label and store in a cool, dry place.
*How to prepare:
A. 0.2% gluconodeltalactone (GDL) (to acidify the jam) = 0.002 x 1000 grams or 1 kilo = 2 grams or 0.002 kilo

B. 50% Syrup
Basis: 1 kilo ube slices/puree
1kilo x 0.5 = 0.5 kilo or 500 grams sugar
1kilo x 0.5 = 0.5 kilo or 500 grams water

UBE PASTILYAS

Materials needed

mashed ube, 1 kilo (5 cups)
sugar,300 g (2 1/4 cups)
butter or margarine, 200 g
evaporated milk, 1 cup
full cream powdered milk, 1 cup
Utensils needed

rolling pin chopping or kneading board spatula
frying pan kitchen knife wax paper
Procedure

Clean ube tubers by soaking in tap water and scrubbing using scrubbers to remove surface dirt.
Rinse thoroughly.
Boil for 30 minutes to 1 hour until soft or retort at 20-psi for 5 minutes.
Drain thoroughly.
Peel. Cut, slice and mash ube. Weigh mashed ube.
Add the sugar and evaporated milk. Cook over slow fire. Stirring should be done constantly until a smooth mixture is obtained.
Add the full cream powdered milk. Stir while cooking. The mixture should not stick to the sides of the frying pan.
Cool to room temperature.
Transfer the mixture over a kneading board covered with wax paper.
Sprinkle small amounts of sugar over the wax paper.
Spread the mashed mixture using a rolling pin until it is 1-inch thick.
Spread butter and small amounts of sugar over the mixture.
Make slices of about 4 x 1 cm. Wrap individually.
UBE POWDER

Materials: ube slices, 2 kg

Utensils needed

cabinet drier cheesecloth knives
hammermill/pulverizer stainless steel trays retort or autoclave
or osterizer packaging materials carton boxes
sieve stainless steel bowls
Procedure

Clean ube tubers by soaking in tap water and scrubbing using scrubbers to remove surface dirt.
Rinse thoroughly.
Boil for 30 minutes to 1 hour until soft or retort at 20-psi for 5 minutes.
Drain thoroughly.
Peel. Cut and slice ube about 2 to 3 mm thickness. Weigh.
Dry in cabinet dryer at 60oC until ube becomes brittle.
Remove from dryer.
Grind using hammer mill/pulverizer.
Sieve the pulverized ube in a 45-mesh/300 microns siever.
Pack ube powder using metalized foil bags.
Seal thoroughly. Pack in carton boxes.
Label and store in a cool, dry place.
UBE FLAKES

Materials

ube puree, 1 kg
maltodextrin
Utensils

drum drier spatula/rubber scraper plastic bags
stainless steel bowls/trays weighing scale
osterizer/blender stainless steel scissors/cutter
Procedure

Clean ube tubers by soaking in tap water and scrubbing using scrubbers to remove surface dirt.
Rinse thoroughly.
Boil for 30 minutes to 1 hour until soft or retort at 20-psi for 5 minutes.
Drain. Peel, slice and mash ube in water (1:1).
Weigh mashed ube.
Add 5% maltodextrin*. Dissolve in 95% water.
Blend thoroughly until smooth.
Dry using a drum dryer.
Cut and/or form into shapes while hot.
Pack in PP bags (0.003- to 0.004-thickness) after cooling at room temperature.
Seal. Pack in carton boxes. Label. Store in a cool, dry place.
*How to prepare:
5% maltodextrin solution (bulking agent or carrier and for color protection)

Basis: 1 kilo ube slices/puree: 1kilo x 0.05 = 0.05 kilo or 50 grams
1kilo x 0.95 = 0.95 kilo or 950 grams

5% solution of maltodextrin (50 grams of maltodextrin + 950 grams water) will be added to 1 kilo of ube slices prior to blending or pureeing

A piece of cake made with ubeUbe (or ubi) is the Filipino word for purple yam (Dioscorea alata). It contains pigments that gives its violet color.

In India, this vegetable is known as ratalu or Kand or violet yam or the Moraga Surprise. In other parts of the Malay world, the word ubi refers to any yam or tuber. In Tonga: ʻufi (and is considered there as a royal food), in Hawaiʻi: uhi, in Tahiti: ufi. In the Philippines, ube is cooked with sugar and eaten as a sweetened dessert or jam called ube halaya which is a bright violet color. Ube is also an ingredient in the fruity dessert halo halo, another popular Filipino dessert.

In botany, this species is also known by the names "water yam" and "winged yam."

The oldest and the simplest  recipe for ube I learned from my Lola is
'lunaw'. It is like  lugaw for  rice. Peel the ube and chop into smaller
pieces. Cook until soft and sticky. Add sugar or salt to taste.

mr. daray: what's the difference between ube jam and halayang ube? i regularly buy halayang ube at NCCC and it looks, smells, and tastes just like ube jam.

Ube Jelaya. What’s the fuzz, I asked myself when offered a serving at the Star Café of Kabayan Hotel Pasay. 

Fried and wrapped it came on the table! And like with any other food offered to me, this fried ube jelaya (jam) may be worth the experience.

One spoonful of this vibrant purple jam that landed on my excited taste buds was enough to evoke thoughts on how this yam that thrives across Southeast Asia and the South Pacific, was cooked. Jane Andres of Kabayan Hotel Pasay ( my host) and I started recalling in a jiffy how town and barrio folks cooked it over medium-low flame with constant “arm-numbing stirring.” Family members would even take turns stirring the cooked ube mixture and the smell of firewood, that made it exotic, used to be evident in the jelaya. With all the cups of milk and sugar that are blended with the cooked ube, it is certainly a NO-NO food to diet conscious denizens. Surely, a spoonful wouldn’t hurt but with macapuno, it’s another story. And these were not among our meeting’s real agenda!

Anyway, there may be myriad ways, based on one’s culture, on how to deal with the manner of cooking or preparing this ube jelaya. What touched my palate is a recipe from Quezon province.  Fried or simply painstakingly stirred for an hour or more until the pasty consistency is achieved, the ube jelaya is meant to be a star among our own Pinoy desserts.

You town is one of the biggest producer of Ube in Bohol. Guindulman has started having
 Ube Festival .

Sometime, my colleagues were so curious and ask me where I graduated my undergrad. I just answered, "UB".

"Aha, parehas pala tayo, UP rin kami. Anong year ka ba graduate?"
"Hindi ako UP, UBE.", as I emphasized my answer.
"Oh, yes, are you from Bohol?"

Then I nod for confirmation.

No doubt the Tagalogs know where I came from because of the word 'Ube'.
Thanks God for this very wonderful root crop very popular in Bohol! It really gives me a sense of pride.

Ang ube adunay kaluha, ang tawag apale. Sa dihang bata pa ko kauban sa akong Tatay, inig tanom sa ube kauban sad ang apale. Ang apale puti ug panit. Dili kaayo modagko pareha sa ube. Labo  sad kaayo ang unot. Wala nako kakita karon.

Ang apale  usa sa mga tubers nga sa Bohol ra makita.

Naa day grazie pero tua sa  big smoke city (Melbourne) dia man ko sa country town morag province sa ato, wa tawon layo kaayo mi sa city 2hrs and 1/2 drive, that is in 110 k. mao kon moadto ko vcta sa akong mga anak maamlit kog mga pinoy nga pagkaon ug akong ibaligya pod diri, kay ang mga pinoy diri manugon man pod. unya pakapinan pod para ako, Tagsa ra jud ko moadto sa city.

Mao man ni siguro giingon nga 'manna' or a food from heaven. Dili ko kaayo sigurado kon Apale ba ang pangalan. Nakalimotan kona ang lokal term niaana. Pero its a tuber with yellowish and smooth peel. Usually, this tuber grows aplenty during famine when foods are so scarce. The tuber is sliced into thin chips and dried to remove the saps before cooking.

Here in  Digos City, I tried planting  the new  ube variety  that climbs like
ampalaya. The taste is quite good but it does not grow as big as the native
ube we have.

This variety of ube did not attract farmers to plant.

Ube (宇部市, Ube-shi?) is a city located in Yamaguchi Prefecture, Japan on the Seto Inland Sea.

As of 2008, the city has an estimated population of 176,370 and the density of 613 persons per km². The total area is 287.69 km².

The city was founded on November 1, 1921 and merged with neighbouring Kusunoki Town on November 1, 2004.

Its industrial base is in chemicals, concrete and steel. The presence of Ube Industries in the city's economy is significant.

Previously a coal-mining town the city has developed an effective policy to improve its environment. In particular it has combatted the problem of air pollution and its success in doing so saw it being recognised by the United Nations Environment Programme (UNEP). It was added to the UNEP's Global 500 Roll of Honour in 1997 Globabl 500 entry.

The city participates in an extensive recycling program that separates garbage types in 4 major categories with specified pick-up times and locations each week.

Ube was utilized during the colonization epoch. As beans, pineapples, banana trees as well as corn was brought to the Philippines from other parts of the Spanish Empire, the Ube fruit was also incorporated. It was mass produced, as well as exported to other parts of the Latin World.

Ube is also seen in Spain, Mexico, Argentina, Columbia, Venezuela, Bolivia, Peru etc.

An example of globalization some 3-4 centuries ago.

The arrival of the Spaniards and with their incorporation of Spanish infrastructure, led to the development of a burgeoning agricultural system, never seen before in the Philippines or in the region. The development of the Hacienda-Encomienda system provided and produced untold amounts of food the Malay peoples have never seen in such great quantity before. Constancy of the production of corn, rice, guava fruit, tomatoes, potatoes, ube, artichokes, cabbages, production of chickenry, pigs, cows, and other kinds of livestock.

All of which, thanks to Spanish Colonization, provided the basis for the beorgoning Filipino population.

When the Spaniards arrived in 1565, the population in the islands was no more than 200,000. Within a century's time, it had grown to 2 million. By the time of the revolution, the population has skyrocketed to 8 million.

Harvesting of ube  started in the first week of December. The people in
our place are so proud of this rootcrop. One way of sharing to their
neighbor is that during the Christmas season, some give ube as  the
"pinaskohan"to carollers instead of money.

Mananaygon  must bring sacks for  the  storage of  the ube .

Ube was utilized during the colonization epoch. As beans, pineapples, banana trees as well as corn was brought to the Philippines from other parts of the Spanish Empire, the Ube fruit was also incorporated. It was mass produced, as well as exported to other parts of the Latin World.

Ube is also seen in Spain, Mexico, Argentina, Columbia, Venezuela, Bolivia, Peru etc.

An example of globalization some 3-4 centuries ago.

yup, and accordingly, it was because UBE is so delicate to handle and would easily rot when mishandled, like being dropped on the flloor, and owing its value and considering the long trip (by Galleons then) they took to bring the products from Philippines to other countries, that the Spaniards taught farmers to take good care of the Ube produce, even to the extent of kissing it in case they dropped it. you may call it "holy strategy"...
however, i still do believe Ube is a wonderful gift of our nature and lands. kissing it has never been so meaningful as it was...it's not because it's a "holy" food, as it was originally intended, but because it's a gift that we all must be grateful, like any other food from the land and the sea.

When Spanish conquistadores arrived to the Philippines, a major staple food that was given to the infantryman was Ube and Rice. Rice provided to be so effective as a supply for the infantryman, that it was mass produced in the islands.

Hence the development of the Encomienda System based on rice agriculture. Rice proved to be so successful in the Philippines, that the Spaniards exported Rice to its Colonies in the New World in the Americas.

Rice, as a result, has been grown in the vast rolling fields of Mexico, Honduras, Nicaragua, Columbia, Venezuela, Argentina, Peru, Bolivia, Paraguay, Cuba, Puerto Rico and even in the Spanish Motherland, Spain Itself.

To this day, the rich and fertile grounds of Andalucia grow Rice. The same ones that was exported and originated from Spain's former colony, The Philippines.


Interesting, eh? :)


One can therefore, dare and declare to say, that INDEED, The Philippines played a role in the development of the Spanish Empire.

Ubi is also a good subject for a love story. Rene Sumodobila, the Bohol Ubi Center Foundation Inc. technical adviser, recounted the legend and historical interpretation of ubi.

He said that "there was a beautiful royal princess in the island of Bohol named Bugbung Humasanun, so secluded (binokotan) in her chamber where she could only be found spinning, weaving or embroidering. She was adored for her coiffured panta or talabhok, a great mass of hair accented with artificial switches which is of great offense for a man to even touch. Her appearance to the public was like the first ray of the sun that gives joy and delight, or like a sudden flash of lightning that causes fear and respect.

"A great, brave and just chief named Datung Sumanga married her after several pangngagad and going through ordeals to prove his love to the princess. He ruled his subjects, settled their disputes, protect them from the enemies, and lead them in battle. There was peace in Bohol during his rule.

"From this couple and the barangays and communities they led, grew the population of the Boholanos

History of ubi
During the years intervening between the great migration and the great famine, the ubi became a "wild" plant unknown to the people. As a "wild" plant, it continued its natural cycle of propagation and dormancy, while its underground tubers continuously spread, until accidentally discovered due to the famine.

In their constant search for food, someone accidentally struck a fleshy tuber in the ground - some colored white and some with purple color. The famished settlers cooked it and found the tuber to be very delicious and highly nutritious. The "unknown" tuber saved the people from famine. Thereupon, the newly discovered tuber was instantly venerated as a saviour crop. Its a "manna from heaven". 

The sacredness of the ubi did not come for no reason, apart from being given by Providence. Ubi is also about the rich history of the ordeals of the Boholanos and their resiliency as a people able to triumph over natural and man-made adversities.

wa lagi ko kadungog sir felix nga na diay tubohan sad sa davao. (layo ra nang digos sa davao city diay?)

i usually associate davao with durian, saging, mangosteen, duterte, pearl farm, florendo, mt. apo and philippine eagle. pero dili sugar cane ug mangoes.

The fisrt sugar mill in Mindanao is in Guiging , Hagonoy Davao del Sur that opened
in 1972. Guihing Sugar Central  in Davao del Sur is the largest sugar mill in Mindanao.
It is located 10 km. from Digos City.

Kon moingon ta ug durian, orchids, saging, eagle  , it is davao city. Kon moingon ta ug sugar cane, mangoes, saging, it is davao del sur.

Davao City was the first city , the capital of  the lone Davao Province before. First, it was  divided into three provinces, Davao del Norte, Davao del Sur, and Davao Oriental. Latter in 1998, Davao del Norte was sliptted into two provinces, Compostela Province or Com Val. From 1998 to  2000, four  cities were born: Island Garden City of Samal , Tagum City and Panabo City and one city in Davao del Sur, Digos City. Lately Matti , the capital of Davao Oriental became a city in 2007.

Region X1 is called Davao Region comprising of four provinces : Davao del Norte, Davao Oriental, Com Val and Davao del Sur.The six cities are: Davao City, Tagum City, Island Garden city of Samal, Panabo City, Digos City and Matti city.

Naghisgot man tag unsa ka sagrado sa ube alang sa mga Bol-anon. Nakahinumdom ko nga sa bata pa ko, ang akong kinabuhi, in one way or another, touches that of the sacred ube. My grandfatehr and ancestors were famous ube farmers in Cortes. I have been observant as a kid. Usa sa akong mahinumdoman nga sa ilang pagtanum sa ube daghan og mga stages ang land preparation lang.  Niadtong panahona, wa naho kaayo masabti ngano nga ingon-adto man ang mga pamaagi nga gihimo sa akong lolo. But when i grew up and studied agriculture, i found out nga duna diay toy scientific relevance ag ijang gihimo.

Panaglitan kining mosunod:
1. Pag-baow - clearing the area from unnecessary weeds, shrubs, etc. ibilin ang kahoy nga sobra sa 2 meters ka taas = kay gamiton para katayan sa ube

2. Pag-hinas - hanigan og lukay ang baow aron daoban (usahay gikan pas layo ang kuhaan sa lukay labi nag way kalubihan sa duol)  = mao ni equivalent sa soil sterilization para walay sakit-sakit nga motakboy sa ube

3. Pagguwad - maghimo og hutok para tamnan. Individual nga hutok matag punoan. (Think of the soil type nga batoon, topography nga bakilid, etc which makes it even harder)

4. Pag-bajang - nagnagon ang hutok aron makuha ang mga gamot ug bato. Aning panahona, hanigan og mga dahon nga patay ang ilawom sa hutok, apilan og danggay gikan sa ilawom sa pinsa sa balay. = mao ni equivalent sa composting, kay sa unang panahon, dili man mogamit og commercial nga abono mao nga mga dahon ang silbing patambok sa ube. Ang danggay gikan sa ilawm silong duna may urea kay sagol man usahay sa ihi sa tawo og sa mananap. Imagine pila ka taro nga danggay kon naa kay usa ka ektarya ang baow.

5. Pag-guha - hiwa-on ang binhi nga ube mga 2-inches x2 inches each (kadtong wala madunot o mangunot ang panit), disdisan  (halibisan sa kilid) ug i-air dry for half day. = aron ma seal off ang unod, dili malata ug dili susceptible to fungal infection inig tanom

6. Pagtanom ug pagpaabot hangtod moturok. Buntag ug hapon pa-asohan aron walay mananap or pests. Usahay kon taas ang huwaw, bubo-an pa jud og tubig.

7. inig torok, butangan og harog o katayan sa ube vine. Magpaabot mga 5-6 months nga mo-mature ang ube ug ready na panglinon. Kini mahitabo kon ang dahon malaya na ug ang panit sa ube puro na itom ug dili na nipis. Samtang mag-paabot, dili jud yatakyatakan ang baow aron di matandog ang pagtubo sa ube. Hinuon maghinay labi na kon mamunit og mga katlong ug snails nga mokutkot sa dahon.

So practically, ang time table sa ube from land preparation to planting mokabat sa mga 8 months, kapin kon kulang, labi na kay ang paghinas is usually done in March or April samtang uga ang mga dahon.

And mind you, dili sa tanan panahon nga dagko ang ube nga mapanlin. Nakasuway ko nga ang unod nga akong napanlin mas gamay pa kay sa guha nga akong gitanom. Or should I say, the reward was not worth the effort?  Suway ba mo...

Mao na nga sagrado jud ang ube kon akoy pasultihon. Pero motanum lang jud gihapon kay lami man. Labi nag kabus-ok, iniling, tam-isan, kaliko, ug ang yummy kinampay nga maoy ahong gilung-ag karon pasa ube jam sa pista pohon... hmmmm

Niadtong uinang panahon sa pre Spanish tine, adunay hulaw o taas nga init nga miabot sa Bohol. Angnakaluwas nila sa kaguton  mao ang ube.  Tungod sa kataas sa hulaw, ang tanang pagkakaon nahurot na ug wala nay mapalit. Ang ube nga ilang gitagoan maoy na lay ilang gihinayhinay ug lunaw.

Giila sa mga Bol-anon  nga ang ube is a 'manna form heaven' , mao nga halukankon mahulog isip
pag- ila sa iyang pagka sagrado. 

Pero ako dili mohalok sa ube.

Halayang Ube (Purple Yam Jam) Recipe

 

Estimated preparation and cooking time: 2 hours

 

Halayang Ube Ingredients: 

1 kilo ube yam root

1 can (14 ounces) evaporated milk

2 cans (12 ounces) condensed milk

1/2 cup butter or margarine

1/2 teaspoon of vanilla (optional)

 

Halayang Ube Cooking Instructions:

On a pot, boil the unpeeled ube yam in water and simmer for 30 minutes. Drain and let cool.

Peel and finely grate the ube yam.

Heat a big wok in medium heat.

Melt butter or margarine, add the condensed milk and vanilla flavoring. Mix well.

Add the 1 kilo grated ube yam,

Adjust the heat to low

Keep on mixing the ingredients for about 30 minutes or until sticky and a bit dry (but still moist).

Add the evaporated milk and continue to mix for another 15 minutes.

Let cool and place on a large platter.

Refrigerate before serving the halayang ube.

Ube Balls


--------------------------------------------------------------------------------

* 4 cans condensed milk (300 ml)
* 1 kilo cooked, mashed ube
* 1 cup cornstarch dissolved in
* ? cup water




--------------------------------------------------------------------------------

Mix together mashed ube and condensed milk. Cook in a heavy pan over low fire. Add a dash of ube or violet food coloring. Stir constantly. Halfway in cooking, remove from heat and add dissolved cornstarch. Blend well, put back on fire. Continue cooking until it thickens and mixture separates from pan. Cool. Then, shape into balls, roll on sugar. Wrap in cellophane.

Naghisgot man tag unsa ka sagrado sa ube alang sa mga Bol-anon. Nakahinumdom ko nga sa bata pa ko, ang akong kinabuhi, in one way or another, touches that of the sacred ube. My grandfatehr and ancestors were famous ube farmers in Cortes. I have been observant as a kid. Usa sa akong mahinumdoman nga sa ilang pagtanum sa ube daghan og mga stages ang land preparation lang.  Niadtong panahona, wa naho kaayo masabti ngano nga ingon-adto man ang mga pamaagi nga gihimo sa akong lolo. But when i grew up and studied agriculture, i found out nga duna diay toy scientific relevance ag ijang gihimo.

Panaglitan kining mosunod:
1. Pag-baow - clearing the area from unnecessary weeds, shrubs, etc. ibilin ang kahoy nga sobra sa 2 meters ka taas = kay gamiton para katayan sa ube

2. Pag-hinas - hanigan og lukay ang baow aron daoban (usahay gikan pas layo ang kuhaan sa lukay labi nag way kalubihan sa duol)  = mao ni equivalent sa soil sterilization para walay sakit-sakit nga motakboy sa ube

3. Pagguwad - maghimo og hutok para tamnan. Individual nga hutok matag punoan. (Think of the soil type nga batoon, topography nga bakilid, etc which makes it even harder)

4. Pag-bajang - nagnagon ang hutok aron makuha ang mga gamot ug bato. Aning panahona, hanigan og mga dahon nga patay ang ilawom sa hutok, apilan og danggay gikan sa ilawom sa pinsa sa balay. = mao ni equivalent sa composting, kay sa unang panahon, dili man mogamit og commercial nga abono mao nga mga dahon ang silbing patambok sa ube. Ang danggay gikan sa ilawm silong duna may urea kay sagol man usahay sa ihi sa tawo og sa mananap. Imagine pila ka taro nga danggay kon naa kay usa ka ektarya ang baow.

5. Pag-guha - hiwa-on ang binhi nga ube mga 2-inches x2 inches each (kadtong wala madunot o mangunot ang panit), disdisan  (halibisan sa kilid) ug i-air dry for half day. = aron ma seal off ang unod, dili malata ug dili susceptible to fungal infection inig tanom

6. Pagtanom ug pagpaabot hangtod moturok. Buntag ug hapon pa-asohan aron walay mananap or pests. Usahay kon taas ang huwaw, bubo-an pa jud og tubig.

7. inig torok, butangan og harog o katayan sa ube vine. Magpaabot mga 5-6 months nga mo-mature ang ube ug ready na panglinon. Kini mahitabo kon ang dahon malaya na ug ang panit sa ube puro na itom ug dili na nipis. Samtang mag-paabot, dili jud yatakyatakan ang baow aron di matandog ang pagtubo sa ube. Hinuon maghinay labi na kon mamunit og mga katlong ug snails nga mokutkot sa dahon.

So practically, ang time table sa ube from land preparation to planting mokabat sa mga 8 months, kapin kon kulang, labi na kay ang paghinas is usually done in March or April samtang uga ang mga dahon.

And mind you, dili sa tanan panahon nga dagko ang ube nga mapanlin. Nakasuway ko nga ang unod nga akong napanlin mas gamay pa kay sa guha nga akong gitanom. Or should I say, the reward was not worth the effort?  Suway ba mo...

Mao na nga sagrado jud ang ube kon akoy pasultihon. Pero motanum lang jud gihapon kay lami man. Labi nag kabus-ok, iniling, tam-isan, kaliko, ug ang yummy kinampay nga maoy ahong gilung-ag karon pasa ube jam sa pista pohon... hmmmm

Ang ube ang pinaka unique sa tanan nga rootcrops. It can be stored for almost a year
basta ibutang sa cooled dry place. Pag-abot sa June mosugod nag turok kay maoy
season sa pagtanom.  Dili sad moturok kon imong itanom paghuman ug harvest.

 :o wow mao diay ni sinaligan nga pagkaon sa ako lola. hehe. tenk u for all info. daghn sab ko mga words dri nga di ko masabtan.

i'm just wondering, was there any alcoholic drinks created from ube in the old times?

dri sa amo sa Davao area, pede man mghimo og lambanog (tagalog style) gikan sa tuba.
di ba sa russian area, mag himo man sila og vodka gikan sa potato skins (nakita lng nako sa movie) hehe
tequila sab, gikan sa mexico's blue agave plant
sake = rice wine

naa na bay ube alcoholic drink?  ::)

Davao City was the first city , the capital of  the lone Davao Province before. First, it was  divided into three provinces, Davao del Norte, Davao del Sur, and Davao Oriental. Latter in 1998, Davao del Norte was sliptted into two provinces, Compostela Province or Com Val. From 1998 to  2000, four  cities were born: Island Garden City of Samal , Tagum City and Panabo City and one city in Davao del Sur, Digos City. Lately Matti , the capital of Davao Oriental became a city in 2007.

Region X1 is called Davao Region comprising of four provinces : Davao del Norte, Davao Oriental, Com Val and Davao del Sur.The six cities are: Davao City, Tagum City, Island Garden city of Samal, Panabo City, Digos City and Matti city.

A Boholano from the fishing village of Napo, Loon once became governor of the entire Davao when it was yet an undivided province. His name was Ricardo "Barodog" Miranda.

Gato, welcome to this Forum. Ube chooses the right kind of soil. I think some agriculturist can give you the answer. I know in Bohol it is greatly grown in Ubay.
