Niadtong uinang panahon sa pre Spanish tine, adunay hulaw o taas nga init nga miabot sa Bohol. Angnakaluwas nila sa kaguton  mao ang ube.  Tungod sa kataas sa hulaw, ang tanang pagkakaon nahurot na ug wala nay mapalit. Ang ube nga ilang gitagoan maoy na lay ilang gihinayhinay ug lunaw.

Giila sa mga Bol-anon  nga ang ube is a 'manna form heaven' , mao nga halukankon mahulog isip
pag- ila sa iyang pagka sagrado. 

Pero ako dili mohalok sa ube.

Halayang Ube (Purple Yam Jam) Recipe

 

Estimated preparation and cooking time: 2 hours

 

Halayang Ube Ingredients: 

1 kilo ube yam root

1 can (14 ounces) evaporated milk

2 cans (12 ounces) condensed milk

1/2 cup butter or margarine

1/2 teaspoon of vanilla (optional)

 

Halayang Ube Cooking Instructions:

On a pot, boil the unpeeled ube yam in water and simmer for 30 minutes. Drain and let cool.

Peel and finely grate the ube yam.

Heat a big wok in medium heat.

Melt butter or margarine, add the condensed milk and vanilla flavoring. Mix well.

Add the 1 kilo grated ube yam,

Adjust the heat to low

Keep on mixing the ingredients for about 30 minutes or until sticky and a bit dry (but still moist).

Add the evaporated milk and continue to mix for another 15 minutes.

Let cool and place on a large platter.

Refrigerate before serving the halayang ube.

Ube Balls


--------------------------------------------------------------------------------

* 4 cans condensed milk (300 ml)
* 1 kilo cooked, mashed ube
* 1 cup cornstarch dissolved in
* ? cup water




--------------------------------------------------------------------------------

Mix together mashed ube and condensed milk. Cook in a heavy pan over low fire. Add a dash of ube or violet food coloring. Stir constantly. Halfway in cooking, remove from heat and add dissolved cornstarch. Blend well, put back on fire. Continue cooking until it thickens and mixture separates from pan. Cool. Then, shape into balls, roll on sugar. Wrap in cellophane.

Naghisgot man tag unsa ka sagrado sa ube alang sa mga Bol-anon. Nakahinumdom ko nga sa bata pa ko, ang akong kinabuhi, in one way or another, touches that of the sacred ube. My grandfatehr and ancestors were famous ube farmers in Cortes. I have been observant as a kid. Usa sa akong mahinumdoman nga sa ilang pagtanum sa ube daghan og mga stages ang land preparation lang.  Niadtong panahona, wa naho kaayo masabti ngano nga ingon-adto man ang mga pamaagi nga gihimo sa akong lolo. But when i grew up and studied agriculture, i found out nga duna diay toy scientific relevance ag ijang gihimo.

Panaglitan kining mosunod:
1. Pag-baow - clearing the area from unnecessary weeds, shrubs, etc. ibilin ang kahoy nga sobra sa 2 meters ka taas = kay gamiton para katayan sa ube

2. Pag-hinas - hanigan og lukay ang baow aron daoban (usahay gikan pas layo ang kuhaan sa lukay labi nag way kalubihan sa duol)  = mao ni equivalent sa soil sterilization para walay sakit-sakit nga motakboy sa ube

3. Pagguwad - maghimo og hutok para tamnan. Individual nga hutok matag punoan. (Think of the soil type nga batoon, topography nga bakilid, etc which makes it even harder)

4. Pag-bajang - nagnagon ang hutok aron makuha ang mga gamot ug bato. Aning panahona, hanigan og mga dahon nga patay ang ilawom sa hutok, apilan og danggay gikan sa ilawom sa pinsa sa balay. = mao ni equivalent sa composting, kay sa unang panahon, dili man mogamit og commercial nga abono mao nga mga dahon ang silbing patambok sa ube. Ang danggay gikan sa ilawm silong duna may urea kay sagol man usahay sa ihi sa tawo og sa mananap. Imagine pila ka taro nga danggay kon naa kay usa ka ektarya ang baow.

5. Pag-guha - hiwa-on ang binhi nga ube mga 2-inches x2 inches each (kadtong wala madunot o mangunot ang panit), disdisan  (halibisan sa kilid) ug i-air dry for half day. = aron ma seal off ang unod, dili malata ug dili susceptible to fungal infection inig tanom

6. Pagtanom ug pagpaabot hangtod moturok. Buntag ug hapon pa-asohan aron walay mananap or pests. Usahay kon taas ang huwaw, bubo-an pa jud og tubig.

7. inig torok, butangan og harog o katayan sa ube vine. Magpaabot mga 5-6 months nga mo-mature ang ube ug ready na panglinon. Kini mahitabo kon ang dahon malaya na ug ang panit sa ube puro na itom ug dili na nipis. Samtang mag-paabot, dili jud yatakyatakan ang baow aron di matandog ang pagtubo sa ube. Hinuon maghinay labi na kon mamunit og mga katlong ug snails nga mokutkot sa dahon.

So practically, ang time table sa ube from land preparation to planting mokabat sa mga 8 months, kapin kon kulang, labi na kay ang paghinas is usually done in March or April samtang uga ang mga dahon.

And mind you, dili sa tanan panahon nga dagko ang ube nga mapanlin. Nakasuway ko nga ang unod nga akong napanlin mas gamay pa kay sa guha nga akong gitanom. Or should I say, the reward was not worth the effort?  Suway ba mo...

Mao na nga sagrado jud ang ube kon akoy pasultihon. Pero motanum lang jud gihapon kay lami man. Labi nag kabus-ok, iniling, tam-isan, kaliko, ug ang yummy kinampay nga maoy ahong gilung-ag karon pasa ube jam sa pista pohon... hmmmm

Ang ube ang pinaka unique sa tanan nga rootcrops. It can be stored for almost a year
basta ibutang sa cooled dry place. Pag-abot sa June mosugod nag turok kay maoy
season sa pagtanom.  Dili sad moturok kon imong itanom paghuman ug harvest.

 :o wow mao diay ni sinaligan nga pagkaon sa ako lola. hehe. tenk u for all info. daghn sab ko mga words dri nga di ko masabtan.

i'm just wondering, was there any alcoholic drinks created from ube in the old times?

dri sa amo sa Davao area, pede man mghimo og lambanog (tagalog style) gikan sa tuba.
di ba sa russian area, mag himo man sila og vodka gikan sa potato skins (nakita lng nako sa movie) hehe
tequila sab, gikan sa mexico's blue agave plant
sake = rice wine

naa na bay ube alcoholic drink?  ::)

Davao City was the first city , the capital of  the lone Davao Province before. First, it was  divided into three provinces, Davao del Norte, Davao del Sur, and Davao Oriental. Latter in 1998, Davao del Norte was sliptted into two provinces, Compostela Province or Com Val. From 1998 to  2000, four  cities were born: Island Garden City of Samal , Tagum City and Panabo City and one city in Davao del Sur, Digos City. Lately Matti , the capital of Davao Oriental became a city in 2007.

Region X1 is called Davao Region comprising of four provinces : Davao del Norte, Davao Oriental, Com Val and Davao del Sur.The six cities are: Davao City, Tagum City, Island Garden city of Samal, Panabo City, Digos City and Matti city.

A Boholano from the fishing village of Napo, Loon once became governor of the entire Davao when it was yet an undivided province. His name was Ricardo "Barodog" Miranda.

Gato, welcome to this Forum. Ube chooses the right kind of soil. I think some agriculturist can give you the answer. I know in Bohol it is greatly grown in Ubay.

Cooking Tips:

You may spread additional butter or margarine on top of the jam before serving.

Sure, maka smile ko ug huna 2x kay daghan gyud nalipay kon mga aping pa to sa mga chicks akong gi kiss inig balhin sa ube gikan sa bukag paingon sa pinsa, ubos sa balay. Pero sagdi lang kay mao man sad ni ang nakalibre sa amoa sa panahon nga walay bugas  ug  humot baja ang sinugbang ube kadtong puti kay labo bisan ug bag-ong ani.

Kahinundom jud ko aning Ube.First naku kaon elementary pako when nag bakasyon me sa probinsya sa ako lola,gi luto-an me ug ube nya gi tuslob namo sa gatas nga liberty usahay pod ituslob namo sa latik. Nya ug pasko dili jud mawala ang Ube jam ni lola.

Ube, the Sacred Food of the Boholanos

Ube is one of the tubers or yam that grows abundantly and harvested in December in
Bohol. After the harvest, the rootcrops are inspected and those with bolo cuts and
bruises were used first for food as substitute for rice and corn. The rest are stored for
family consumption anytime during the year. Ubi planting goes back in June. There are
many varities of ube like kabus-ok, tam-isan, kabawoy, liko , binanag and the famous
purple-violet kinampay, the king of ube.

Ube is the main staple rootcrops of the Boholanos and venerated as sacred crop since
the ancient times.   During a famine that happened   long befor the coming  of the
Spaniards, it is said that the ube was the only crop grew in Bohol and saved the people
from extreme hunger and death.That is why they had a great respect for it and why it
is the only staple food mentioned in the Bohol Hym. At this time, the  Boholanos started
to honor by having  an Ube Festival in January. They had  also the Miss Ube Beauty
Pageant. You can see displays of different ube varities with different sizes and an award
is given to the biggest ube.

Tagged as one of the countrys' five crops for export by the Department of Trade and
Industry, the demand of ube continues to grow. Here and abroad, it is being marketed
in powdered form, puree, dried chips, cubes, syrup and for ice cream, the famous purpled
'kinampay'.

When one speak of Ube to a Boholano, there is always a story to tell.  When a person
accidentaly drop an ube  to the ground or floor, they say an apology saying "puyra gaba,
wala nako tuyoa" and kiss it as a sign of reverence and love.

The Boholanos believed that Ube was the  special food given to them by Bathala, the
Supreme Creator. It was the food that saved them from extreme famine when a drought
 happened long time ago.

I did not know that you posted this some 3 years ago. I just recently read this post of yours today and would like to extend gratitude for your article.

Ube, definitely is a great food product. When I was in Bohol last year, I had my share of Ube Jam as well as Ube Ice Cream.
