The Benguet State University (BSU) has completed the training of core groups of women in the province on the technology of producing noodles out of vegetables to further increase livelihood opportunities in the area.Dr. Violeta Salda, in-charge of the 10-million vegetable noodle factory here, said the women trainees were from Buguias, Mankayan and Atok towns which are the biggest producers of temperate vegetables in the province.
She said that due to the nutritious noodles the BSU produce, "the demand has greatly increase that the women associations can take the initiative for their own production so that they can have additional source of livelihood."
She also said that the production process will be through the women's Rural Improvement Councils (RICs) which have been active in pursuing various livelihood opportunities for women in the area.
Salda said that the expanded noodle and similar products became possible after the BSU had perfected the process to produce noodles and pasta not only out of squash but also with pechay, cabbage, carrots and other indigenous vegetables.
Records show that farmers in the area have combined harvest of more than 2,000 tons of fresh vegetables daily. (PNA)
