Saluyot, a humble vegetable but highly nutritious

A nutritious vegetable called saluyot, excellent for health, youthfull looks and stamina.
In nutirional aspects it is rich in beta carotene like carrots, iron against anemia  and calcium for stong bones and teeth.
Nutritionists found that 45 grams of saluyot approx. 48 grams contains 20 calories, .3 g fat,  3.4 g carbohydrates, 1.3 g protein, 87.3 mg calcium, 22.5 g phosphorous, 220 g vit A (retinol), traces of tiamin, riboflavin,  niacin and vit. C. Saluyot is an excellent anti-oxidant.
I found out that saluyot originated from Egypt and it is cultivated in Syria and Damascus.

It was my Ilocano uncle who taught me how to cook saluyot with Ligo (sardinas), young saba (saging). Pampangos cooked shrimps with saluyot.

according to a filipino nutrition book that i read recently, saluyot is rank among the top healthy leafy veggies around. they are shown in their order of importance:

1. malunggay
2. saluyot
3. ampalaya leaves
4. sili leaves
5. kangkong,alugbati, camote tops

interestingly, saluyot is the plant which is the source of a fiber called jute that is made into cord which is sometimes woven into sack material; kadtong karaan nga sako sa humay ug copras.
