Ok, here's a simple home made soup. I'd call this:
MISO SOUP
ingredients:
olive oil
ginger
tomato
spring onion
tofu
miso paste (of course)
oyster mushroom (or shiitake or any mushroom you like)
vegetable or seafood stock or chicken stock, whatever you prefer
seaweed or you can use green vege like spinach, chard, cabbage
cilantro (optional but since I love cilantro, i put this any dish i can!)
salt and pepper to taste
sesame oil
sautee ginger until brown. you can let it stay or you can take it out, whatever you prefer. add white portion of the spring onion and tomato and cook until wilted. add mushroom and stir for a minute or two. add stock or broth and let it boil until mushroom is cooked. add miso paste - i use a tablespoon for every cup of stock but if you like more miso flavor, go ahead, don't be shy. lol. season to taste. add green vege and cilantro and just let it quickly boil and remove from heat. serve hot with a drop or two of sesame oil. enjoy!
