for vegetarian and healthy recipes, mao kini ang akong menu for the night:
vegetarian pasta
olive oil
1/2 onion, chopped or minced, however you want to
2 or so cloves of garlic
1 bulb fennel, slice in half and chop
lots of tomatoes (bana-banaa nlang. daghan man gud mi sa among garden so kapatuyang ko!)
vegetable or chicken broth or white wine
1 bottle artichoke halves, drained
salt and pepper (I add a little anchovy paste)
parsley and basil, reserve for garnish
pasta of your choice
in a sauce pan, saute onion and fennel with the olive oil until transluscent, then add garlic and tomatoes. Continue cooking about 5 minutes. Add the liquid and season to taste. Simmer for about 20 minutes. Add the artichoke halves. Add the cooked pasta. Garnish with the reserved parsley and basil. Serve and enjoy!
