Hala, mag post man diay ko dapat empanada ba? hehehhe  naa man sa google na Cel so I will just share my empanada ala samosa.

Vegetable filling:

olive oil
diced onions, garlic and bell pepper
finely cubed vegetables like potatoes, carrots, fennel or celery (but my favorite is fennel bulb), water chestnut
peas
salt and pepper to taste.  you may also add vege or chicken cube.  (I use Herb*ox coz there's no msg)
Square pasta wraps (better known as wonton wrapper)
Egg wash (beaten egg with a little water)


Here's how you do it:

Saute onion and garlic until translucent.  Add bell peppers. Season with salt and pepper. add the cubed vegetables and season again with salt and pepper and the chicken or vegetable cube.  (we are layering the flavor here). Cook until just tender but still al dente. Let cool for awhile.

In the middle of the wrapper, put a spoonful of filling.  Moisten the edges of the wrapper with egg wash and fold in half to form a triangle and crimped the wrapper either by just pinching or using fork.  You can either fry or bake in 350 degress F oven.


Note:  If you prefer the filling to be with meat, just add ground turkey or any other meat to your liking right before you add the vegetables.

Dali ra na cel ba kay di naman ka mag masa ug dough kay wonton wrapper nlang gamita.  Pwede pod na i steam Cel.  I have a very quick way to steam stuff like that.  Just use a little olive oil oi, ibutang dayon na sa kaha nang imong wonton kon mainit na oil then butangan gamay tubig and cover right away para ma trap ang steam.  mao na kana dayon!

versatile kaayo ni na recipe Cel.  If oven, about 12 to 15 minutes, or until brown and crispy.  Before nimo i bake, brush a little egg wash na nabilin nimo sa top.  If this is not a healthy thread, I would say brush with melted BUTTER! hhahahha

Here's another Salad Recipe...Basil, Orange, Peach Salad

you need:

fresh basil
approx: 6 oranges, peeled and segmented
           3 orange peaches, peeled and sliced
1 red onion, sliced
2 Tbsp red wine vinegar
1 clove garlic
2 Tbsp unsweetened apple juice
2 Tbsp sunflower oil

** mixed all.. :D

I suggest that you fry nlang this one.  Use lang olive oil or canola oil para healthier.  Mas crunchy man gud kong gi fry.

I made my version of samosa earlier.  I had a few wonton wrappers left so I tried to do something about it.  The first batch was trashed kay nasunog beyond recognition kay ning anhi pa man ko computer nag TB.  So as requested by C2, I am posting this simple "healthy" dessert here.  I don't have a name yet so you may suggest a name for this crunchy delight.

The crunch:

wonton wrappers
brown sugar
sesame seeds

The macerated fruit berries (or any of your favorite fruit)

3 cups fruits
1/2 cup sugar
a pinch of salt
1 teaspoon orange or lemon zest
2 tablespoon lemon and or orange juice (you can also use liqueur like grand marnier)

To macerate, clean and slice fruits. In a glass bowl, place the fruits and the rest of the ingredients.  Lightly toss and let it stand in the refrigerator for at least 30 minutes while you prepare the crunchy wonton wrappers.

Preheat oven to 350 degrees F.

Mix equal parts of brown sugar and sesame seeds. 

In a cookie sheet, lay flat the wonton wrappers.  You don't have to give space in between wonton wrappers as you do when baking cookies because wonton is not going to expand anymore.  Brush with melted butter and generously sprinkle the top with the mixture of brown sugar and sesame seeds. 

Bake at a preheated oven for about 2 to 3 minutes or until just golden brown.  I suggest you watch carefully while baking - no TB for awhile. 

Eat while wonton is still warm and crunchy with or without the macerated fruits like you eat chips with salsa.  Enjoy!

I looked at a couple books on low or no sugar desserts and I grabbed a little recipe for a low fat cannoli w/berries. :)

Bowl #1
1 pint sliced strawberries (or other sweet berries)
1 teaspoon splenda or equal to sweeten berries)

Bowl #2
2 teaspoons splenda or equal (to sweeten cottage cheese)
1 twelve oz package of low-fat cottage cheese
1 teaspoon vanilla extract
1 1/2 grated orange (or lemon) rind


optional stuff: Semisweet chocolate (grated) to top the cream and lady fingers.


1) toss the berries in 1 teaspoon splenda, set aside.

2) get another bowl and use a blender to whip the cottage cheese until its fluffy.
3) add the 2 teaspoons of splenda to the cottage cheese
4) add vanilla and the orange (or lemon) rind.
5) grab 6 small bowls, put some berries in it, and top with the cottage cheese mixture.
6) enjoy! :)

Ms. C2, we went to Asian Seafood Buffet two weeks ago and I ate tons and tons of oyster, crabs, shrimps, sushi, etc!

Lemon Chicken

Believe me, this is not only healthy but very delicious!

Lemon Chicken


you need:

2 egg whites, lightly beaten
3/4 cup fresh bread crumbs
2 Tbsp sesame seeds (optional)
3/4 tsp salt
1/4 tsp black pepper
4 boneless skinless chicken breast halves (about 1-1/4 pounds)
2 Tbsp flour
3/4 cup fat-free reduced-sodium chicken broth
4 tsp cornstarch
1/4 cup fresh lemon juice
2 Tbsp brown sugar
1 Tbsp honey
2 Tbsp vegetable oil
4 cups thinly sliced romaine lettuce

here's how:

1. Place egg whites in shallow dish. Combine bread crumbs, sesame seeds, salt and pepper in another shallow dish.
2. Dust chicken with flour; dip into egg whites. Roll in crumb mixture.
3. Blend broth into cornstarch in small bowl until smooth. Stir in lemon juice, brown sugar and honey.
4. Heat oil in large nonstick skillet over medium heat. Add chicken; cook 5 minutes. Turn chicken over; cook 5 to 6 minutes until browned and juices run clear. Transfer to cutting board; keep warm.
5. Wipe skillet clean with paper towel. Stir broth mixture and add to skillet. Cook and stir 3 to 4 minutes until sauce boils and thickens.
6. Place cabbage on serving dish. Cut chicken crosswise into 1/2-inch slices; place over cabbage. Pour sauce over chicken. Garnish with lemon slices and fresh herbs, if desired.

Broccoli Lasagna

you need:

2 Tbsp olive oil
1 cup thinly sliced fresh mushrooms
3 cloves garlic, chopped
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1 can (6 ounces) tomato paste
1 Tbsp red wine vinegar
1 tsp dried oregano or 2 teaspoons fresh oregano, chopped
1 tsp dried basil or 2 teaspoons fresh basil, chopped
Pinch red pepper flakes
2 cups ricotta cheese
1 cup mozzarella cheese, divided
1/4 cup chopped fresh parsley
9 lasagna noodles, cooked and well drained
3 cups chopped broccoli (about 1 large bunch), cooked and well drained
1 to 2 Tbsp grated Parmesan cheese

here's how:

1. Preheat oven to 350°F. Spray 8X8-inch pan with cooking spray.
2. Heat oil in large saucepan over medium heat. Add mushrooms and garlic; cook and stir about 5 minutes or until mushrooms are browned and beginning to release liquid. Stir in tomatoes, tomato sauce, tomato paste, vinegar, oregano, basil and pepper flakes. Simmer over low heat, stirring occasionally.
3. Meanwhile, combine ricotta, mozzarella and parsley in medium bowl; set aside.
4. Place 3 lasagna noodles in bottom of prepared pan. (Trim to fit.) Spread half the ricotta mixture over noodles. Layer half of broccoli over ricotta mixture. Spoon about 1/3 tomato mixture over broccoli. Repeat layers. Place last 3 noodles over second layer; spread remaining tomato mixture over noodles. Cover with foil sprayed with nonstick cooking spray.
5. Bake 25 minutes. Uncover; sprinkle with remaining 1/4 cup mozzarella and Parmesan cheeses. Bake, uncovered, 10 minutes or until cheese melts. Let stand at least 10 minutes before serving.
