Pie Day 2009

here in our office, we celebrate Pie Day every Nov, a few weeks before Thanksgiving...sila tig bake, ako tig lng, tig kaon, tig kuha sa pix..  ;D


some of the pies ranging from sweet tomato, pumpkin, blueberry, chicken pot pie, Ratatouie veggie pie, etc

Yummmmy naay mince meat pie, pecan,peach,pumpkin,blackberry ba na? ug cherry pie. Kabalo ka Jams di ko ganahan mokaon ug crust anang pie ang fillings ra akong kan on. Pumpkin pie lami.

di ko sure sa tong sulod sa lollipie..basta lami man...
kanang naay luwag? basig pumpkin o sweet potato pie nah...

wa tawn ko ka tilaw sa tanan pies kay perti tam-isa nah :)

basta daghn, di na jud kaunon ang crusts...wa man ata cherry pie ani...last year mas daghn pa jud...

Ratatouie veggie pie,

I know Ratatouille is usually served as a side dish, but also may be served as a meal on its own (accompanied by rice or bread). Tomatoes are a key ingredient, with garlic, onions, courgettes (zucchini), aubergine (eggplant), bell peppers (poivron), carrot, marjoram and basil, or bay leaf and thyme, or a mix of green herbs like herbes de Provence. There is much debate on how to make a traditional ratatouille. One method is to simply saute all of the vegetables together. Some cooks, including Julia Child, insist on a layering approach, where the aubergine and the courgettes are sauteed separately, while the tomatoes, onion, garlic and bell peppers are made into a sauce. The ratatouille is then layered in a casserole – aubergine, courgettes, tomato/pepper mixture – then baked in an oven.

When ratatouille is used as a filling for savory crepes or to fill an omelette, the pieces are sometimes cut smaller than in the illustration. Also, unnecessary moisture is reduced by straining the liquid with a colander into a bowl, reducing it in a hot pan, then adding one or two tablespoons of reduced liquid back into the vegetables.

tympa manay kay ngayo pa ko sa recipe....most of the pies naa printed recipe...i'll ask for the electronic format...1st time pud ata ning ratatat (hehehe) na apil...tung una mas daghn pa man mga lemon meringue pie, etc...pero puros tam-is..maajo ron tuiga kay naa sab chicken pot pie og kining ratatat pie kay lunch na naho..., daghn pa jud dessert :)

Ratatat recipe  ;D


THE RATATOUILLE:
1 large eggplant (1 1/2 pounds) cut into 1-inch chunks
3 small zucchini ( 3/4 pound), cut into 1-inch chunks
7 tablespoons extra virgin olive oil
1 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
1 large onion, cut into 1-inch chunks
1 red pepper, cored and cut into 1-inch chunks
3 large garlic cloves, finely chopped
1 1/2 pounds plum tomatoes
4 sprigs fresh thyme
1/4 cup chopped fresh parsley or basil.
1. For the biscuits: In a bowl, whisk together the flour, cornmeal, sugar, baking powder, baking soda and salt. Using a pastry cutter or fork, cut in the butter until mixture resembles coarse crumbs. Fold in the sour cream. Gently knead mixture until it comes together in a ball, adding a drop or two of milk if necessary. Cover with plastic wrap and refrigerate until ready to use.
Preheat oven to 450 degrees.
2. For the ratatouille: In a bowl, toss eggplant and zucchini with 5 tablespoons oil; season with 3/4 teaspoon salt and 3/4 teaspoon pepper. Spread vegetables in a single layer on one or two large baking sheets (do not crowd vegetables). Transfer to oven and roast, tossing occasionally, until golden, about 20 minutes.
3. Heat  1 tablespoon oil on medium in large saute pan. Stir in the onion, pepper, garlic and remaining 1/4 teaspoon salt. Cook until softened, 5 to 7 minutes. Stir in the tomatoes and thyme sprigs; simmer gently until tomatoes are cooked and mixture is stew-like, about 10 minutes. Stir in roasted vegetables and parsley. If you are not using an oven-safe pan, transfer mixture to a 2-quart gratin dish or baking pan.
5. Divide biscuit dough into six equal balls. Use your palm to flatten each ball into a 1/2 -inch-thick disk. Arrange on top of ratatouille mixture. Brush biscuits lightly with milk.
6. Transfer skillet or pan to oven and cook until biscuits are golden, 25 to 30 minutes. Let cool 10 minutes before serving.
