My HUMBA Recipe

Here's my version of humba.  Actually this is from my email to jamo2x kay nag ask man sya ug recipe ani adtong mid July. I copy ko na lang aron madali.  :D

Jams, here's my wa dinhi wa didto recipe for humba.  ambot kon makapasar ba kaha ni sa akong lola (dugay nang namatay) kon nahitabong natilawan ni sya but daghan nailad na liwat kuno ko sa akong lola kay kamao mobuhat ug humba. hahaha pwera bujag!

ayaw ko'g ipa hatag ug measurement ha kay wa jud ko ana but mag try ko'g jama2x sa measurement.

pork legs, let say about 3 to 4 pcs. or about 7 to 10 lbs., sliced
soy sauce, 1/4 cup
garlic, 5 ka dagko jamo'ng piraso (or 10!)
bay leaves - 4 leaves
corn pepper (i think we call this pamenta), ground and whole
vinegar or suka, 1/4 cup (ingon sa akong mommy lahi ang suka sa vinegar kay ang suka gikan sa tuba.  ayaw supak!)
add a hint of lemon juice just to be cool.

brown sugar, about 2 table spoons
red wine, about 1 to 2 cups (optional)
pork or beef broth or just plain water
pork cubes
cooking oil

now let's get cookin' but first let's prep the meat.  the night before or at least 6 hours, marinate pork legs with the first 7 ingredients.

once ready to cook, in a huge pot, depending on the amount of meat you are gonna cook (kadaghan ba'g adlib oi!), of course, heat the cooking oil.  once starting to smoke, add brown sugar and keep stirring to avoid the sugar from burning.  you just want to caramelize the sugar, not make tira-tira out of it! hehehe  so padayon ta.  once the sugar is caramelized, add the meat excluding the marinade, though you have to reserve it.  brown the meat and then add the marinade, and the rest of the ingredients.  bana-banaa lang imong liquid igo lang ma cover.  imong lat-an or if you have pressure cooker, mas dali but the conventional cooking method is just fine, even better daw.  season to taste with salt and maybe more pepper.  if you use pork cubes, you may add too.  there's a pork cube called Herbox  that has no MSG. (consider that as a comercial break nang Herbox! hehehe).  Keep cooking until most of the liquid is reduced and that it looks like the humba served in fiestas in Bohol.  Check if you need to add vinegar or other seasoning like salt and pepper. 

Optional:  you may want to add whole boiled eggs and friend bananas.  Add the fried bananas towards the end kay aron di malata pero kon sab-a imong gamit, hala at the middle of cooking kay di na dali-dali malata. You may also add black beans which I highly recommend.  If you are adding black beans, go easy on the salt and soy sauce because canned black beans are really salty.

That's it!  Serve hot with nilung-ag na rice.

By the way, for those who want to use achuete or papuwa, idugang sa hot oil.  Ukay-ukaya hangtud mapuwa na ang oil then discard the seeds.  If using the paste, dissolve using the vinegar.

Tohn, ang mga tagalog tawgon  nila ning humba ug adobo pero lahi ra kay ang adobo di man kasing lata aning humba unya ang usa pod nakalahi kay medyo naay hint of sweetness.  Akong bestfriend sa Hawaii mag request ani akong i process/sterilize aron molungtad bisan walay refrigeration. 

Naay similarity ning humba ug patatim although kuti ra kaayo ang patatim buhaton.

Ngano jud kaha lami ang humba kan-on? Kalami jud ibahug sa binuyok nga mais numero 12 nga bag-ong nilung-ag. Inig human tulakan dayon ug sprite or coke aahhhhh lami kaayo ipanaghoy inig human kaon :)

Salamat aning cooking tips about humba Grace.Pareha jud lagi mi ni Hubagbohol ug recipe gi lilian kay naa toy oregano unya way gi mention nga magcaramelize sa sugar ug wa poy saba.Nagluto ko last week butangan nako ug saba nahimo man tong pork estofado murag mao mao ra sila heheheh.

Mga kusinera sa balay,aniay akong ikadugang sa pagluto ug Humba.Abi nimo ang dapit sa tiyan nga tambok nga nagdala ug nipis nga unod imo kining hilisan aron nakuha usab ang diotay nga mantika ug kon ma-brown na gani ang kolor sa imong gihilisan imo na kining ibutang ug sarang aron usab and subrang mantika sa tambok makatulo'Pagkahuman imo kining esahug sa tanang nga timpla nga karne ug ipadayon ang pagluto sa hinay nga kalayo aron ang iyang pagkahumok dili mabungkag.

Raquel, sigon sa akong nahibaloan sa akong mga apohan mao kini. Imong ibutang ang baboy nga dunay tambok dala ang panit niini ngadto sa kaha.Unsa butangan kini nimo sa tubig ug usab diotawng asin ug ang tubig igo lang mo-apaw sa karne or tambok nga hilisan. Sa ingon niini dunay probability nga nahumok ug diotay ug hangtud kini maiti ang tubig magsugod na kini ug prito hangtud ang kolor niini dark brown na ug niianang tungora mogula na usab ang mantika.Mao kini ang paghilis sa tambok unya mao na kadto,imong isagol sa timpla nga duna tanan recado sa karne. Tuod diay imo usab balibalihon aron dili masunog ang tambok ug level ang iyang pagkakolor.Salamat sa imong pangutana.

Daghang kaayong salamat Carling kay gitubag nimo akong pangutana.Karon kabalo na ko unsaon paghilig sa baboy. Usa jud ni sa sayop natong mga batan on pa  sa una nga igo ra mohabhab pero wa magtan aw ug mag observe giunsa pagluto tong mga putahi kaniadto sa atong mga ginikanan. Ang kadaot pud ani kay wala raba to silay mga notes sa recipe mao kitang ingsunod nila nagkapa kapa ug giunsa kaha to mao i base na raman atong nabal an sa atong nahinumduman.
Kay kini bitawng humba ang uban pasultion butangan pud kono ug lubing nilugit ang kaldero nga lutoan ani aron di ba to mopilit or modukot ,ug medyo na remember bitaw sad ni nako ug gamay nga murag naay lubi nilugit ibutang nila sa una.

Raquel, kanang imong giingon nga butangan ug unod sa lubi may pagkatinuod niana,pero sa amo nga panimalay kon ugaling daghan ang himoon nga humba kini among banigang ug tudyok sa dahong saging aron dili masunog.Kon masunog galing ang sampot sa imong giluto-an pait ang timpla ug bahong anhoy ang imong masimhot.Usab aniay dilata nga humba nga gikan sa Hongkong. Ang brand niini "Maling'.Gamay ra kining lataha.Humba ang lami ug humok kaayo ang tambok,pero ang nakaderencia kay tamis ra kaayo ang templa.Tuod man kon maghumba ka unya butangan ug salted beans, imo usab butangan ug dried nga gikan sa dried nga puso sa saging or bulak sa water lily man tingale kana.Basta adto lang sa tindahan ug Insik kay nasayud sila niini.brown and color was dried nga water lili o' poso sa saging ba kini.Humba Insik style.

Kining dried azucena kay stalks man tingali ni, Bay Bugs, tag-ason morag takway. Kanang laurel kay porma jud og ordinaryo nga dahon, pormag isda. Isda pud nga ordinaryo (kay naa may mutant stonefish, bwahaha).

Kining dried azucena kay stalks man tingali ni, Bay Bugs, tag-ason morag takway. Kanang laurel kay porma jud og ordinaryo nga dahon, pormag isda. Isda pud nga ordinaryo (kay naa may mutant stonefish, bwahaha).

Dili angay humbaon na, Blue, kay langsa jamo. Tambok tuod, pero wa pay panakot nga nadiskobrehan nga alkontra sa langsa ani. ;D

dili pwede humbaon kay dili makabukal ang tubig sa kalangsa sa gatasan.ang dapat sa gatasan dauban sa kajo.

I-submit ning imong recipe sa Chaîne des Rôtisseurs, Blue, basin makadaog ni under the exotic dish category, bwahaha. (Maproblema sila kay limitado ang supply sa lutoonon.) ;D
