Help with Wedding menu needed!!
« on: August 21, 2008, 08:22:35 AM »
Hi All!

I am in state of planning mine and my girlfriends wedding on Bohol next year, and although I plan to use a wedding planner, I still want to take a very active part in one of the more important parts of the wedding personally.

I am ofcource speaking of the dinner!!

In that I need your help good ladies and gentlemen!

I have got this coming wife to impress - and her family ofcource! There will be about 60-75 guests, but we can plan for 100 if its easier. So, yes, we are speaking about a large dinner here, with starters,
Soup, Main dishes, Lechons (Lechon Baboy or Lechon Baka??), Deserts etc. etc. etc. Please use your imagination and set up a excusive menu, because what I am looking for is something the guests will be remembering for the next year - at minimum! The price is not much of a question, and the dishes can be of fish and meat: Whatever is most revered on Bohol and Philippines!

So please all! What menu with specific dishes would hugely impress my coming wife and her parents-in-law?:

Thank you all!  :D

Niccolado

Niccolado, how many people are you expecting to attend the wedding reception?  I understand you are based in Norway and that your lady is from Pilar, right?  We can help you plan out with the menu but it may be a futile exercise because ultimately it is gonna be your bride and her family who are going to be planning the menu.  It's the way how things work back home, or at least how I remember things are.  Well, if you just want to be able to suggest menu to your bride, then that's another story and sure, we can help you.

Do you plan on having servers or is this gonna be a buffet dinner?

Lechon baboy is almost always the main dish in every special gatherings like your wedding.

Me and my coming wife have been speaking about how to do things, and we have agreed on that seeing she lives in Pilar she will handle a lots of the preparations for our wedding. I however will be covering a lot of the expenses.

Lechon Baboy seems to be a wonderful dish, but it seems to me that lechon Baka is maybe a little better? Or should I go for both?

I am not decided whether the dinner should be served on a platter or like a buffet. I told my coming wife that I want a traditional Philippine wedding ceremony so the dinner should be served accordingly. I thought it to be proper that in Philippines you do things the Philippine way!

The wedding itself will be a civil ceremony, since I am a christian protestant while my lady is a christian catholic. But besides that I want the wedding to be stupendous, classy, romanrix and a very traditional Philippino wedding!

Lechon Baka is not the common dish but sure you can go ahead with that.  I'd say that has a WOW factor to your wedding reception.  :)  We once had a lechon baka for a beach party and the whole barrio was invited.  There were lots of oh's, ah's and wow's but after the baka was stripped of its meat and carcass was all that was left, to me it looked like the skeletons of dinasaur in the movie Jurassic Park.  Silly me! :)

The table setting and the number of guests in your party is important consideration on how you serve your food - to go buffet or plate-in or just have food in each table for guests to partake.  In my opinion, there's a lot of wastage in buffet because people tend to get food more than they can eat however, buffet is the best way to go if you don't have much servers. But, if I am to decide, I prefer to have a nicely set table with floating candle in the middle and the table cloth is sprinkled with flower petals.  Food is served in each table with servers keeping eyes on tables as to what food to replenish.  If you know already your guests, you can even have their name cards and placed on the table or chair.

For other food, it would be great to have dishes of all kinds of meat like chicken, beef, pork, fish and other seafoods, and have plain vegetables.   We Filipinos usually mix meat in our vegetables so if you have guests who are vegetarians, it would be best to just have plain vegetables. If you are having lechon baka, I think that would take care already of the beef dish.  For soup, umm, in our small barrio, we have huge beef or pork soup bones but that doesn't look so romantic though. lol Just have either a corn soup or a birds nest soup.  Fresh green salad is not commonly served in barrio parties but you can have Coleslaw.  For dessert, you can have the all-time favorites like leche flan, maja blanca, macaroons, miniature puto (steamed rice cake) and of course, order the best wedding cake in town.  We have friends here in TB who can help you in that.  Just holler again if you need help in ordering cake and or designing your wedding cake.

my wedding had about 200+ guests in it and we served 3 roasted pigs, lechon baka and 6 other main dishes.  ok ra guro if you have 2 lechon baboy and some lechon baka.  pick a few other dishes that you like, common are lumpia, pancit (of course, for long life ^-^), sweet and sour fish fillet, pork adobo.  serve dishes that are a favorite and surely, your wedding will be a hit kay busog cla tanan! =)

best wishes on your wedding! =)

How much do you have to to budget with for a wedding with full package? Which includes rings, clothings, dinners, the wedding ceremoney and all that includes, renting dining hall, cars, entertainers etc? How much do I have to expect to pay in Bohol? Not a  complete luxury setting with the most expensive of everything, but a beautiful and maybe a little above average? A wedding setting for like 50 or 100 people?

I might need your help later on, but ofcource I will have to discuss things with my lady first. Right now, I am just trying to come up with an idea which I intend to present for her.

Niccolado, the total outcome of the planned occasion will be solely dependent on the bride and groom- to-be wishes/choices/preferences.  The wedding planner will add value to your plans and will do the execution.  Hence, we will be having consultative discussion on this.  We will communicate with you via PM, please indicate your email add and contact number.  Options and Concepts will be more than glad to answer your queries and make that dreamed wedding a success - meaning and memorable.

Hello Junayag!

Tried to send you a PM, but it seems your inbox is full. At least thats the message I got! Anyway, here is the post I tried to send you :)

..
Hello!

Refering to my post in the cooking section about me and my ladies wedding late next year.

Right now everything is on the planning stage. We are just discussing back and forth what we would like to have etc. I have been trying to get in touch with http://www.supreme-weddings.com/
which i supposed to be a Bohol marriage planner, but I have not yet got an answer.

Another question is pricing. I am not sure how much I should calculate with. I will use whatever I need ofcource, and I have not really set budget as per today. Also I really hate to set a ammount of money for budget without any knowledge of what to expect. If I set too much, I can "waste" money. If I set too little I can seem to "greedy". So right now, I am trying to get some sums on the table.

If I have to set some sums though:

200k PhP for the wedding/dinner/Wedding cake/ceremony etc.
85k for wedding bands
100k for an engagement ring
40k for wedding gown
20k for a complete barong set
-----------------------------------------------------------
445k php
----------------------------------------------------------
64k for room rental at Linaw Beach Resort (resort not fully decided)
-----------------------------------------------------------
509k
-----------------------------------------------------------

In addition I have ofcource set money for dinners, breakfast and lunch for the whole stay, both in Manila and Bohol. Plus for other expensives which might show up ofcource.

The sums I have set for the wedding is just ideas. They are not set in stone, so I will change them for sure if I have calculated too little. Do you have any idea I would greatly appreciate your input!!

You can send me emails to [email protected]!

Thank you for your very kind help!!

Nic

----

ofcource, seeing the letter is now public, I guess others can post comments to it too! I appreciate any comments! Just know that the sums I have set up is completely taken out of the thin air! So the sums can be rediculously low.. So inputs are neccesary indeed! :)

But remember, seeing this post is in the cooking section, lets put some extra emphasis on the dinner, ok? :D

I would suggest lechon baboy.. lechon baka is not really that common on weddings...  :)
buffet is what i think much better than sit-downs. at least, guests can just choose kung unsa ila ganahan na sud-an, and to how plenty (hehe). and it gives an impression nga dili limited ang kaon. haha.  ;D
i also just got married last year and essential jud for you to be particular with the food you are serving your guests. 3-4 main dishes, ok na. plus the lechon. include soup and/or appetizer and dessert. optional ang salad bar kay dili na kaayo mahalin.  :)
are you planning to get a catering service? or sa hotel/resort na? ask around kung unsay maayo nga food nga lamian...

niccolado, yup lechon baboy or roasted pig is a must.
and I was about to suggest Options and Concept of sirjunayag. Good thing he was able to post here already. Anyhow, their food and serving is great!
And I agree with ate graziey that food should be readily served on each of the guests'
plate. To avoid wastage.
I feel your excitement :) :)

I think I will check out Options and Concept with Sirjunayag when time gets closer! I just need to speak with my lady about it first!

But ok, so far a draft for a menu MIGHT look like this...

1. Starter:
Pork Satay with vinegar-garlic sawsawan

2. Soup:
Aspargus or Creamed Mushroom soup

3. Main Course: Pork Meat
Lechon Baboy with neccesary greeneries, rice, sauce etc.

3. Desert: Cakes
Leche Flan
Wedding cake!
Fresh Fruits

4. Beverages: all kinds
Red wine to the main course
Port wine to the desert
Champagne for a welcome drink and toast
Purified water
Mineral water/Sodawater
Coffee

Any thoughts about this? Do I miss something?

I want our wedding to be memorable and remembered for bringing LOTS! of GOOD and TASTY  food, for our wedding! :D

for drinks you can add beer and whiskey. we are not accustomed to wine because it's expensive
Acustomed or not, there will be wine! I might be a little spoilt like that, because I am a strong believer in that a superb dinner requires wine! Ofcource it will depends a little on the price too. But I hope to be able to afford wines to all the dishes for our guests.

I have calculated that for 50 guests I need like aprox. 30 bottles of red wine, 10-12 bottles of white wine and 10-12 bottle of sparkling wines.. So yes, its a lots of bottles... There will ofcource be purified water which will be served alongside the wine and there will be mineralwater etc. for the children who is attending.

I have checked the prices a little. If I buy in a store I think I can get a decent bottle of red wine for like 600-700 php for a bottle. That means a total 21.000 php. White wine I can get for about the same price I thnk for a decent brand. so that adds another 8400 php. And for sparkling wine I think I can get a bottle for 900 php which will add another 10800 php. We are then speaking about 40.200 php in total. And if I am getting greedy I could always buy 3 litre wine bags, which are even cheaper - and still pretty good. hey, maybe I could even draw a discount for buying in large stocks... who knows..

The dinner.. Not sure but I have calculated with one large lechon baboy and a price like 13.000 php. Soups can be produced easily too in large quantity and should be a very good dish to start with. I guess I should be able to get a soup like Creamed mushroom soup for 50 people for like... 3500 php? I know that Linaw beach resort sells one platter of soup for like 100 php. I think if I buy large I should be able to press that price down to at least 70 php.... Then ofcource we need a wedding cake. I have calculated with 15000 php. I have really no clue what the price for these huge cakes are. Pork satay and sawsawam O think I could get for like 4000 php for 50 guests, and fresh coffee and fruit etc. for like 3000 php? Mineral water/Purified water.. lets say 1000 php there too. If we say this is all I should be able to pay 76000 for the whole dinner..

I think I read somewhere when browsing about Philippines and dinners these words: "Dont be skimpy about food and beverages! When your guests leave your wedding they will soon enough forget about the wedding, but the dinner will always linger in their mind and set your impression about you"

I am a foreigner coming to Philippiines to marry one of your daughers and bring her home with me to Norway. I feel like its important to at least give her family and friends a dinner to be remembered! besides, I am a form believer that the most important meal is the dinner, and special occations.. well special occations are really special occations and needs to be treated as such. I am sure I will be broke as hell when the day is over though, but if you are first putting money into something is should be the day of your wedding! And I dont plan to get married more in this life anyway! :)

Ok... just say it... I am too obsessed, am I not....

Niccolado, it's more on how the dinner or food and wine were setup that lingers in our minds :)

a budget of 600-700 / wine is too much.. I guess? Or maybe you are referring to astis? heheh lol!

you multiply your budget by 3 still you will not go broke nic. it will be easy on your pocket. you have plenty of euro. in fact, my friend mr. bean had more than 1000 guests for his wedding to a dutch gurl. while you have only more than 100 guests. you splurge on the lechon baboy. one lechon is too little.

be prepared for more than 100 people  to show up in lieu of your 50 guests. gate crushing is an art in bohol. just kidding but there's also truth in what i said. so be prepared like a boy scout..

The whole arrangement would be arranged indoor at Linaw beach resort I think, with only the ceremony taking place outdoors. So I think I am relatively safe for party creashers! But I am going to order a very large Lechon Baboy and large deep pans of mushroom soups, so if someone strolls by and into linaw beach resort ant the dining hall, I guess I could always give them something to eat. Unless its the whole island :)

We will choose a wedding planner early next year, and yes, it might very much be Gelyan and options and consepts who have proved to be a great help so far!! And so have this community!

Right now though, I am working a lot to save the neccesary money for this happening.

Good luck, Niccolado!  Your wedding will do just fine!  And yes, it would be wise to have Options and Concepts to give help you conceptualize your wedding and give you options. :)

a friend held a party for 20 persons. she served 1 lechon. only the head and feet were left. so if you only have 1 lechon for 50 persons, it would serve only as an appetizer. lechon is what you provide my friend if you want to impress your pinoy guests. it is the main course in weddings. cut back on the wine and add more lechon..
