my liver adobo is only a can of pineapple and chicken liver, simmer for the next 30 minutes or until mauga gamay ang pineapple juice. I'll try the green peppers next time. :-)
Here is the biochemistry of the additives:
1. The green peppers adds the beta carotene to your Iron-rich liver(chicken), which is effective and healthy for the eyes, especially for your rods and cones (great for night vision!)
2. When you add the potatoes, its rich in starch and carbs, and will absorb the irony taste of the liver, thereby mitigating and appeasing the flavor, and adds in a richy sauce when the potatoe begins to cook and mash up.
3. I also add in onions, so as to add flavor.

Additionals:
a. Black pepper
b. White pepper
c. a tad bit of curry powder (not so much, we're not going bombay mode here, ha ha)
d. a little bit of brown sugar (a teaspoon's worth)
then add in a little of soy sauce (not so much as it leads to excessive sodium reabsorption and increases pre-load; for those who are hypertensive and pre-hypertensive, this is a no-no!, lol!
Add a little bit of vinegar (or what i do, i use lemon juice! citrus flavor is great; plus a great source of ascorbic acid!)
And wala!
