Do you eat frog's legs?
« on: May 12, 2010, 07:51:15 PM »
If you do, maybe you should consider giving it up. According to recent studies, frog species are becoming extinct in alarming rates.

Here are excerpts from www.rt.com:

Who ate all the frogs?

Scientists have warned that the growing appetite for frog’s legs may lead to amphibians becoming extinct.

Eating frog’s legs may be a sign of sophistication and a mature palate, but the increasing fashion to consume the French delicacy throughout Europe and Asia has resulted in an alarming drop in numbers.

According to a study undertaken by scientists at the University of Adelaide, the annual global trade in amphibians is currently between 200 million and one billion. Scientists say this level of consumption has led to over 100 species of frogs becoming extinct – a number that could rise to 3,000 in the future.

Although increased human consumption is one factor contributing to the decline, the loss of habitat, polluted water and climate change are also aiding the dwindling number of frogs worldwide.

Professor Corey Bradshaw from the University of Adelaide says “frogs are already in a bad way throughout most parts of the world. He says: ”The main driver is certainly habitat loss; so we’re already dealing with a group that’s being hammered and we’re eating up to one billion frogs a year.“

Together with frogs being eaten to extinction, the trend of filling in ponds with concrete is wiping out frogs. Conservationist Andrew Barber from Cheshire has just been involved in a dispute with his local council to stop a pond from being replaced by a car park.

Barber said his family had been coming to the pond to watch the tadpoles and frogs “for three generations.” ”Destroying it would have a detrimental effect on morale of the community, not to mention the ecologic systems," he said.

Professor Bradshaw says people are unaware of the vital role frogs play in almost all eco-systems. He says steps are now needed to prevent what he describes as a “devastating chain-reaction”.

I think I ate frog legs first time when I was in Ilocos.  In fairness, it is really very good. I love it. It tastes like chicken. They cook it either deep fry or adobo, either way both are yummy...

I have a friend who said that in Lucena, it is delicacy to have frog meat in their sinigang.

I was livid.

Here's a basic frog legs recipe:

Crispy Fried Frog Legs

2 to 2 1/2 pounds small frog legs
1/3 cup lemon juice
crushed ice
1/3 cup milk
2 eggs -- separated
2 teaspoons vegetable oil
salt and pepper
2 cups all-purpose flour
vegetable oil for deep frying

Wash frog legs thoroughly. Place in a large bowl; sprinkle with lemon juice, and cover with crushed ice. Refrigerate 1 to 3 hours. In a small bowl, whisk together milk, egg yolks, and 2 teaspoons oil. Beat egg whites until stiff; fold into milk and egg yolk mixture. Sprinkle frog legs with salt and pepper; dip each in milk-egg mixture, then dredge in flour. Heat vegetable oil in a deep-fryer or skillet to 375°. Fry frog legs until golden brown. When you remove the frog legs transfer to paper towels to drain.

Serves 4 to 6.

Bon appétit!

;D

Even Obama eats frog legs
www.conservationbites.com

As the seemingly never-ending media blitz covering our paper describing the massive world trade in frog legs continues, I came across a very poignant example of how ubiquitous the trade in frog legs for human consumption really is.

Even one of the most powerful men in the world eats them. Need we say more?

Almost like chicken meat, yes, although more experienced palates would say it's closer to rabbit meat, with a subtle suggestion of fish thrown in...
