Ube, the Sacred Food of the Boholanos

Ube is one of the tubers or yam that grows abundantly and harvested in December in
Bohol. After the harvest, the rootcrops are inspected and those with bolo cuts and
bruises were used first for food as substitute for rice and corn. The rest are stored for
family consumption anytime during the year. Ubi planting goes back in June. There are
many varities of ube like kabus-ok, tam-isan, kabawoy, liko , binanag and the famous
purple-violet kinampay, the king of ube.

Ube is the main staple rootcrops of the Boholanos and venerated as sacred crop since
the ancient times.   During a famine that happened   long befor the coming  of the
Spaniards, it is said that the ube was the only crop grew in Bohol and saved the people
from extreme hunger and death.That is why they had a great respect for it and why it
is the only staple food mentioned in the Bohol Hym. At this time, the  Boholanos started
to honor by having  an Ube Festival in January. They had  also the Miss Ube Beauty
Pageant. You can see displays of different ube varities with different sizes and an award
is given to the biggest ube.

Tagged as one of the countrys' five crops for export by the Department of Trade and
Industry, the demand of ube continues to grow. Here and abroad, it is being marketed
in powdered form, puree, dried chips, cubes, syrup and for ice cream, the famous purpled
'kinampay'.

When one speak of Ube to a Boholano, there is always a story to tell.  When a person
accidentaly drop an ube  to the ground or floor, they say an apology saying "puyra gaba,
wala nako tuyoa" and kiss it as a sign of reverence and love.

The Boholanos believed that Ube was the  special food given to them by Bathala, the
Supreme Creator. It was the food that saved them from extreme famine when a drought
 happened long time ago.

We grow ube in our family farm in Pangangan island Calape pero amo rang kan-on.Lami baya ang ube sa binignit naa poy gitawag ug nilunaw.I remember many times I drop the Ube unya gipakiss gyud ko sa akong Mother kay makagaba lagi kono.Pila kaha ka ube akong nakissan.Sa ilalom pa gyud sa lantay i store ang ube kay mao may toy mas cooler nga place mao pud lagi mosugod sila ug katay so its normal gyud nga kara balay sa bohol siguro ilawom sa lantay naay ube nagsguod ug katay.

and unod. Wala ko kasulay pagtanom.

Estimated preparation and cooking time: 2 hours

 

Halayang Ube Ingredients:

1 kilo ube yam root

1 can (14 ounces) evaporated milk

2 cans (12 ounces) condensed milk

1/2 cup butter or margarine

1/2 teaspoon of vanilla (optional)


Halayang Ube Cooking Instructions:

On a pot, boil the unpeeled ube yam in water and simmer for 30 minutes. Drain and let cool.

Peel and finely grate the ube yam.

Heat a big wok in medium heat.

Melt butter or margarine, add the condensed milk and vanilla flavoring. Mix well.

Add the 1 kilo grated ube yam,

Adjust the heat to low

Keep on mixing the ingredients for about 30 minutes or until sticky and a bit dry (but still moist).

Add the evaporated milk and continue to mix for another 15 minutes.

Let cool and place on a large platter.

Refrigerate before serving the halayang ube.

 

Cooking Tips:

You may spread additional butter or margarine on top of the jam before serving.

For the sweet toothed, sprinkle a little sugar on top of the jam after placing on the large platter.

Instead of manually grating the ube, you may cut it in cubes and use a blender to powderize the ube.

UBE JAM

Materials needed

ube puree*, 1 kg
water
pure refined white sugar
GDL
*Puree - to reduce food to a thick smooth liquid-by pushing it through a sieve or whirling it in an electric blender.

Utensils Needed

rubber scraper/spatula carajay weighing scale
osterizer/blender LPG with stove jars with cap
retort/autoclave stainless steel ladle
Procedure

Clean ube tubers by soaking in tap water and scrubbing using scrubbers to remove surface dirt.
Rinse thoroughly.
Boil for 30 minutes to 1 hour until soft or retort at 20-psi for 5 minutes. Drain and peel.
Cut, slice and mash ube. Weigh.
Add 0.2% glucono-delta-lactone (GDL)*.
Prepare 50% sugar solution* (syrup). Heat.
Add the syrup in mashed ube (1:1).
Blend thoroughly. Stir/Cook ube in moderate fire until desired consistency is attained.
Pack in jars. Leave 1/3-inch headspace. Seal thoroughly.
Process in retort at 15-psi for 15 minutes. Cool at room temperature.
Pack in carton boxes.
Seal, label and store in a cool, dry place.
*How to prepare:
A. 0.2% gluconodeltalactone (GDL) (to acidify the jam) = 0.002 x 1000 grams or 1 kilo = 2 grams or 0.002 kilo

B. 50% Syrup
Basis: 1 kilo ube slices/puree
1kilo x 0.5 = 0.5 kilo or 500 grams sugar
1kilo x 0.5 = 0.5 kilo or 500 grams water

UBE PASTILYAS

Materials needed

mashed ube, 1 kilo (5 cups)
sugar,300 g (2 1/4 cups)
butter or margarine, 200 g
evaporated milk, 1 cup
full cream powdered milk, 1 cup
Utensils needed

rolling pin chopping or kneading board spatula
frying pan kitchen knife wax paper
Procedure

Clean ube tubers by soaking in tap water and scrubbing using scrubbers to remove surface dirt.
Rinse thoroughly.
Boil for 30 minutes to 1 hour until soft or retort at 20-psi for 5 minutes.
Drain thoroughly.
Peel. Cut, slice and mash ube. Weigh mashed ube.
Add the sugar and evaporated milk. Cook over slow fire. Stirring should be done constantly until a smooth mixture is obtained.
Add the full cream powdered milk. Stir while cooking. The mixture should not stick to the sides of the frying pan.
Cool to room temperature.
Transfer the mixture over a kneading board covered with wax paper.
Sprinkle small amounts of sugar over the wax paper.
Spread the mashed mixture using a rolling pin until it is 1-inch thick.
Spread butter and small amounts of sugar over the mixture.
Make slices of about 4 x 1 cm. Wrap individually.
UBE POWDER

Materials: ube slices, 2 kg

Utensils needed

cabinet drier cheesecloth knives
hammermill/pulverizer stainless steel trays retort or autoclave
or osterizer packaging materials carton boxes
sieve stainless steel bowls
Procedure

Clean ube tubers by soaking in tap water and scrubbing using scrubbers to remove surface dirt.
Rinse thoroughly.
Boil for 30 minutes to 1 hour until soft or retort at 20-psi for 5 minutes.
Drain thoroughly.
Peel. Cut and slice ube about 2 to 3 mm thickness. Weigh.
Dry in cabinet dryer at 60oC until ube becomes brittle.
Remove from dryer.
Grind using hammer mill/pulverizer.
Sieve the pulverized ube in a 45-mesh/300 microns siever.
Pack ube powder using metalized foil bags.
Seal thoroughly. Pack in carton boxes.
Label and store in a cool, dry place.
UBE FLAKES

Materials

ube puree, 1 kg
maltodextrin
Utensils

drum drier spatula/rubber scraper plastic bags
stainless steel bowls/trays weighing scale
osterizer/blender stainless steel scissors/cutter
Procedure

Clean ube tubers by soaking in tap water and scrubbing using scrubbers to remove surface dirt.
Rinse thoroughly.
Boil for 30 minutes to 1 hour until soft or retort at 20-psi for 5 minutes.
Drain. Peel, slice and mash ube in water (1:1).
Weigh mashed ube.
Add 5% maltodextrin*. Dissolve in 95% water.
Blend thoroughly until smooth.
Dry using a drum dryer.
Cut and/or form into shapes while hot.
Pack in PP bags (0.003- to 0.004-thickness) after cooling at room temperature.
Seal. Pack in carton boxes. Label. Store in a cool, dry place.
*How to prepare:
5% maltodextrin solution (bulking agent or carrier and for color protection)

Basis: 1 kilo ube slices/puree: 1kilo x 0.05 = 0.05 kilo or 50 grams
1kilo x 0.95 = 0.95 kilo or 950 grams

5% solution of maltodextrin (50 grams of maltodextrin + 950 grams water) will be added to 1 kilo of ube slices prior to blending or pureeing

A piece of cake made with ubeUbe (or ubi) is the Filipino word for purple yam (Dioscorea alata). It contains pigments that gives its violet color.

In India, this vegetable is known as ratalu or Kand or violet yam or the Moraga Surprise. In other parts of the Malay world, the word ubi refers to any yam or tuber. In Tonga: ʻufi (and is considered there as a royal food), in Hawaiʻi: uhi, in Tahiti: ufi. In the Philippines, ube is cooked with sugar and eaten as a sweetened dessert or jam called ube halaya which is a bright violet color. Ube is also an ingredient in the fruity dessert halo halo, another popular Filipino dessert.

In botany, this species is also known by the names "water yam" and "winged yam."

The oldest and the simplest  recipe for ube I learned from my Lola is
'lunaw'. It is like  lugaw for  rice. Peel the ube and chop into smaller
pieces. Cook until soft and sticky. Add sugar or salt to taste.

mr. daray: what's the difference between ube jam and halayang ube? i regularly buy halayang ube at NCCC and it looks, smells, and tastes just like ube jam.

Ube Jelaya. What’s the fuzz, I asked myself when offered a serving at the Star Café of Kabayan Hotel Pasay. 

Fried and wrapped it came on the table! And like with any other food offered to me, this fried ube jelaya (jam) may be worth the experience.

One spoonful of this vibrant purple jam that landed on my excited taste buds was enough to evoke thoughts on how this yam that thrives across Southeast Asia and the South Pacific, was cooked. Jane Andres of Kabayan Hotel Pasay ( my host) and I started recalling in a jiffy how town and barrio folks cooked it over medium-low flame with constant “arm-numbing stirring.” Family members would even take turns stirring the cooked ube mixture and the smell of firewood, that made it exotic, used to be evident in the jelaya. With all the cups of milk and sugar that are blended with the cooked ube, it is certainly a NO-NO food to diet conscious denizens. Surely, a spoonful wouldn’t hurt but with macapuno, it’s another story. And these were not among our meeting’s real agenda!

Anyway, there may be myriad ways, based on one’s culture, on how to deal with the manner of cooking or preparing this ube jelaya. What touched my palate is a recipe from Quezon province.  Fried or simply painstakingly stirred for an hour or more until the pasty consistency is achieved, the ube jelaya is meant to be a star among our own Pinoy desserts.

You town is one of the biggest producer of Ube in Bohol. Guindulman has started having
 Ube Festival .

Sometime, my colleagues were so curious and ask me where I graduated my undergrad. I just answered, "UB".

"Aha, parehas pala tayo, UP rin kami. Anong year ka ba graduate?"
"Hindi ako UP, UBE.", as I emphasized my answer.
"Oh, yes, are you from Bohol?"

Then I nod for confirmation.

No doubt the Tagalogs know where I came from because of the word 'Ube'.
Thanks God for this very wonderful root crop very popular in Bohol! It really gives me a sense of pride.

Naa ba mo Pinoy store diha sa Aussie, Tita?  Akong friend sa Sydney kay naa daw sila Pinoy store didto busa maka buy sya'g selecta ube ice cream.  yum!  But, akong gi hidlawan karon kadto lang jud plain nilung-ag na ube, bisan kadtong puti payts na to.

Ang ube adunay kaluha, ang tawag apale. Sa dihang bata pa ko kauban sa akong Tatay, inig tanom sa ube kauban sad ang apale. Ang apale puti ug panit. Dili kaayo modagko pareha sa ube. Labo  sad kaayo ang unot. Wala nako kakita karon.

Ang apale  usa sa mga tubers nga sa Bohol ra makita.

Naa day grazie pero tua sa  big smoke city (Melbourne) dia man ko sa country town morag province sa ato, wa tawon layo kaayo mi sa city 2hrs and 1/2 drive, that is in 110 k. mao kon moadto ko vcta sa akong mga anak maamlit kog mga pinoy nga pagkaon ug akong ibaligya pod diri, kay ang mga pinoy diri manugon man pod. unya pakapinan pod para ako, Tagsa ra jud ko moadto sa city.
