Viral health hack on apple cider vinegar, and verdict

I tried the viral health hack where you take a shot of apple cider vinegar every day — here's the verdict

I thought this stuff would make me healthier, but it didn't seem to do much. (Kristin Salaky)

Apple cider vinegar is often touted as something that will make you healthier.

People claim it can suppress appetite, help with acid reflux, and help your digestion.
 
I took a shot of it every day for 10 days.

I didn't see much of a difference.

I unapologetically love vinegar. My father raised me to believe that french fries should be smothered in malt vinegar, not ketchup. My best friend and I once ate so many salt and vinegar potato chips that it literally burned an indent in her cheek. I have about four different types of vinegar in my cabinet at home. It's an obsession.

And, given the alleged benefits of apple cider vinegar, I thought it was an obsession that could make me healthier.

Although I primarily use it to make salad dressings and in my face masks, ingesting apple cider vinegar is supposed to help with suppressing appetite, improving digestion, and issues associated with acid reflux, the last of which I have.

So I decided to take a shot every day for breakfast for a week. I'd done this once or twice before, so I sort of knew what to expect. But ingesting it religiously, I had been assured, would altar my eating habits, clear my skin, make me invincible to bear attacks, and essentially change my life for the better.

On day one, I eagerly doled out my shot.

According to the internet, you are supposed to drink two tablespoons of apple cider vinegar in the morning for maximum results. I, not thinking very clearly at 6 a.m., decided to take each spoonful individually rather than measure both into a shot glass.

This proved to be the wrong move, because I had to let the taste sit for a while before I could take the second spoonful and chase with a glass of cold water. This was absolutely the worst thing I could have done.

 If you've never tried it, apple cider vinegar has an interesting taste. Although I can eat pickles and drown salads in red wine vinegar, drinking it solo is a whole other story. It tastes like eating 5,000 savory Sweet Tarts at once, and the only way to get rid of the taste is to drown it out with something else.

After gagging a bit, I decided to dirty up a shot glass for the rest of the week for the sake of my taste buds. My boyfriend was pretty confused why my cat-themed shot glasses were piling up in the morning, but once he leaned in and smelled the vinegar on my breath, he got the picture.

In terms of how it made me feel, not a whole lot changed.

I expected this shot to make me feel gassy and awful because of my acid reflux — and it did, but only on the first day. Aside from that, it only made one major difference.

I was starving all of the time.

Now this isn't wholly unusual. I do Weight Watchers, so it's not like I regularly stuff myself. For some reason, however, I had horrible food cravings during this experiment. I wanted french fries, pita bread, and — for some weird reason — red wine and hot chocolate mixed together. I usually crave healthy foods, but for some reason I just felt the need to pig out.

I didn't end up eating these things (well, except for some sweet potato fries) but I did find myself reaching for snacks a little bit earlier in the day and more often. This is weird, because I had always heard that apple cider vinegar could be used to suppress your appetite.

It turns out, that is only true to an extent. Experts told CNN vinegar can make people nauseous and not want to eat very much. Looks like I love vinegar so much that it just made me want to eat more. Whoops!

It didn't end up really helping or hurting my acid reflux. Truth be told, I didn't really notice much of a difference at all when taking these shots, other than a sour taste in the back of my throat for a few hours in the morning.

This got me thinking about how we think about health.

Sure, apple cider vinegar has many uses, and there is some tentative proof that it can be healthy for you, but is it really worth taking a shot of it in the morning? For me, no. Unfortunately, it took me a few days after my experiment to come to that conclusion. In fact, I was only going to do this experiment for a week, but I ended up extending to 10 days just to see if maybe I was doing something wrong.

The thing is, it felt healthy. It felt like I was doing something slightly difficult that would ultimately make me really healthy in the long run. It seemed like a shortcut that should work.

If you're a person who's wanted to get fit or watch what you're eating, you'll know that people love to trick you with small things that will get you "healthy" with as little work as possible. They'll swear that if you just eat all the avocados you possibly can that you'll have glowing skin. Or that if you just invest in some ridiculous health product, you'll be as fit as a weight lifter.

If we're literally just all trying to make ourselves nauseous rather than eating in moderation and moving our bodies as often as we can, is that really health?

I am all for small steps that make people feel better, but this one seems like it's not for me. I will continue to love vinegar more than most human beings, but it will strictly be reserved for Italian subs and french fries.

2. It helps digest carbs.

Sorry, but apple cider vinegar doesn't give you a free pass when it comes to bagels. One small 2006 study linked the liquid to limiting the negative effects of high-carb, high-glycemic-index meals but you should be avoiding those processed carbs anyway! You can fill up on veggies, fruit, whole grains, pulses and low-fat dairy with or without vinegar to get the same health benefits.

Studies suggest the acetic acid in vinegar may help reduce fat production in the liver and improve blood cholesterol levels overall. The caveat: You can't exactly dunk chicken fingers in apple cider vinegar and expect magic to happen. 4. It lowers blood sugar.

It could help, but don't bet on it. Some research linked acetic acid with a mild reduction in blood sugar spikes after meals, slowing food's movement through the GI tract. Another proposed mechanism: Acetic acid reduces the activity of carbohydrate-digesting enzymes. However, current research relies on hyper-specific populations, small sample sizes or rats, not humans.

Diabetics should proceed with caution when using vinegar, since it may affect how much insulin is needed for a meal or snack. For the rest of us, stable blood sugar levels are linked to diets high in plant-based foods and regular exercise. A drop of vinegar won't cause significant changes.

While I wish it were true, just one tablespoon, shot glass or ramekin of vinegar cannot help with weight loss! The only research linking vinegar to weight loss used a tiny sample size and poor controls. Plus, the subjects in the study were on a weight-loss diet to begin with!

The only way to shed excess pounds in a sustainable way is to fill up on veggies and fruit, cut back on saturated fat and added sugar and get movin'!

Simply because "acid" is a byproduct of vinegar production doesn't mean vinegar is a germ-killer, nor does it "detox" any vital organs. The antimicrobial claims made about apple cider vinegar stem from the fermentation process. Science can point to a reduced risk of foodborne illness, not the colds, infections and stomach bugs caused by bacteria and viruses. Staying hydrated, sleeping well and filling up on veggies will stave off sickness much more effectively.

7. It wards off heart disease.

Due to acetic acid's possible link to reduced cholesterol levels, fruit-based vinegar may help prevent cardiovascular disease, especially clot formation. However, the science isn't substantial enough to make a definitive statement. Researchers don't fully understand role of polyphenols, the antioxidants found in plant-based foods that protect cells from damage.

Your best bet is adding apple cider vinegar to veggie-rich foods, which can help to bring out flavor while avoiding creamy, sugary dressings. Vinegar itself may be beneficial, but there's no solid evidence to recommend chugging the stuff just yet!

8. It's packed with probiotics.

Probiotic properties of apple cider vinegar are minimal at best. That's because they're found in the "mother" of vinegars, the substrate leftover after fermentation. Since most commercially-available vinegars are highly-processed, good bacteria is hard to come by. Foods like Greek yogurt, sauerkraut, kimchi, kombucha, miso and tempeh are all better sources with the added benefit of filling you up.

9. Drinking it in the morning helps you eat less during the day.

Sorry, but nope! Delayed gastric emptying seen in the (limited) existing research on vinegar is likely caused by slower digestive enzyme activity in the GI tract. However, drinking apple cider vinegar on an empty stomach can be tough on your digestive system and cause heartburn. Steer clear of supplements, tonics and elixirs that make this hunger-killing claim, and fill up on breakfasts that combine fiber and protein instead.

10. It cures everything!

If you love apple cider vinegar so much that you're using it as a salad dressing or produce topping, by all means, go for it! Vinegar contains zero calories, enhances flavor and poses a low health risk, except for GERD-sufferers. But if you're solely sipping the stuff for its purported health "benefits," science says you're out of luck — at least for now. Your best bet is to fill up on plant-based foods, which will provide everything you need to stay healthy.

Bottom line: Vinegar is for salads, not supplements.

The ancient condiment — the earliest known use of vinegar dates back more than 10,000 years and has been used as both food and medicine — is enjoying a real resurgence lately. “Cleansing diets and juicing have become so popular, and I think that’s created the recent buzz around vinegar,” says Bonnie Taub-Dix, registered dietitian and author of Read It Before You Eat It.

As with any trend, it’s easy to get lost in the hype and start believing that vinegar is a miracle medicine (it isn’t). In fact, one of the most popular claims — that drinking a small amount of apple cider vinegar before a meal helps curb appetite and burn fat — has little scientific support, according to the Mayo Clinic.

Drinking apple cider vinegar before a high-carbohydrate meal improves insulin sensitivity — slowing the rate of blood sugar levels rising — in people who are insulin resistant (a prediabetes condition) or have type 2 diabetes, according to a 2004 study. The researchers note that vinegar may possess physiological effects similar to the anti-diabetes medications acarbose and metformin.

It protects your heart health. Balsamic vinegar prevents the oxidation of low-density lipoprotein (LDL), which is believed to contribute to atherosclerosis—a condition in which plaque builds up in the arteries, blocking blood flow and in some cases, eventually leading to a heart attack or stroke, according to a 2010 study.

Substituting in vinegar can help you lose weight. The condiment can easily replace unhealthy fats — namely, in commercial salad dressing. “What I love to do is take a favorite dressing, even blue cheese, which is rich and high in calories, and I dilute it down with vinegar,” suggests Taub-Dix, who splits commercial dressing into two bottles and fills up the remaining half with vinegar. “The vinegar adds a delicious flavor and cuts calories in half. Or I make my own dressing at home with balsamic or champagne vinegar.”

It kills bacteria. Vinegar is thought to have antibacterial properties that can help fight the infection behind a sore throat. The acidity decreases the pH of tissue, which helps prevent bacteria from growing on its surface. In addition, a 2014 study even found that vinegar’s ingredient, acetic acid, which gives vinegar its tart flavor and strong odor, acts as a non-toxic disinfectant against drug-resistant tuberculosis (TB) bacteria.

Vinegar may help reduce the risk of cancer. Vinegars are a rich source of polyphenols, compounds synthesized by plants to fight oxidative stress. According to 2006 research, consuming polyphenols enhances antioxidant protection and reduces cancer risk.

Bottom line: Vinegar can be beneficial in several ways, but it isn’t a magical cure-all and doesn’t replace common sense behaviors like eating a healthy, balanced diet, notes Taub-Dix. Plus, vinegar is an acid, so going overboard with it or not rinsing out your mouth after consuming it can erode tooth enamel over time.
